Savory meat skewers from the grill with pork loin, olive oil, lemon juice and oregano are a protein-rich finger food for every party.   • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 piece Clove of garlic
  • 1 tsp Oregano
  • 0.5 tsp Salt
  • 1 pinch Black pepper from the mill

Prepare meat

Dab the 500 g piece of pork loin with a kitchen towel and cut into slices about 0.5 to 1 cm thick. Depending on the size, cut each slice into thirds or halves with the meat fiber.

Chop garlic

Prepare marinade

Add 3 tbsp olive oil, 2 tbsp freshly squeezed lemon juice, 1 tsp oregano, ½ tsp salt and 1 pinch of black pepper from the mill to the mixing bowl and mix for 10 sec./speed 3.

Marinate meat

Place the prepared pieces of meat in a bowl and pour the marinade from the mixing bowl over them. Mix everything well so that the meat is completely covered with marinade. Cover the bowl and marinate in the refrigerator for 2 hours.

Prepare wooden skewers

Soak the wooden skewers in a container with water for about 10 minutes.

Equip skewers

Then place 3-4 pieces of the marinated meat close together on each wooden skewer.

Grill meat skewers

Grill the meat skewers in a grill pan, a contact grill, gas or charcoal grill for a total of about 8-10 minutes.

Inspired by the simple but flavorful dishes of Mediterranean cuisine, I have refined this recipe over the years. The combination of juicy pork, fresh herbs and a hint of lemon is simply unbeatable. The secret of these skewers lies in the quality of the ingredients and the marinade. The pork loin, also called pork tenderloin, is a particularly tender and lean piece of meat that is ideal for skewers. The olive oil ensures a juicy texture and transports the flavors of the other ingredients. The lemon juice brings a pleasant acidity into play, which wonderfully complements the meat and gives it a fresh note. Oregano, salt and pepper round off the taste profile and give the skewers their typical Mediterranean character. Garlic should not be missing, of course, it provides the necessary spice. The preparation in the Thermomix® is very simple and saves time. First, the garlic is finely chopped, which is done in seconds in the Thermomix®. Then all the ingredients for the marinade are mixed in the mixing bowl. This creates a homogeneous and aromatic marinade that optimally penetrates the meat. It is important that the meat has enough time to marinate, at least two hours, better overnight. This allows it to fully absorb the aromas and becomes particularly tender. Before grilling, the wooden skewers should be soaked in water so that they do not burn. When grilling, it is important to turn the skewers regularly so that they cook evenly and get a nice browning. For a vegetarian or vegan version, you can replace the pork with halloumi, tofu or vegetables such as zucchini, peppers and eggplant. There are no limits to the imagination when it comes to spices. Thyme, rosemary or smoked paprika go perfectly with the skewers. Serve the meat skewers with a fresh salad, tzatziki or a delicious flatbread. Grilled vegetables or potato salad also go well with it. The skewers are ideal as finger food for parties or as part of a grill buffet. Leftover skewers can be stored in the refrigerator and eaten cold or warm the next day. They can also be prepared well: The marinated meat can be stored in the refrigerator and only put on the skewers shortly before grilling. This gives you more time for your guests.
