Description

This savory rice dish with chicken and vegetables is an absolute satiating meal! I like to cook it when I want to prepare something hearty and uncomplicated. The dish is perfect for the whole family and can be prepared well in advance. The chicken becomes wonderfully tender and the rice perfectly absorbs the flavors of the vegetables and broth. A dash of lemon juice and fresh parsley provide a pleasant freshness. Try it, it just tastes delicious!

Ingredients (12 ingredients)

  • 2 piece large Onions
  • 3 Stange(n) Celery stalks
  • 4 piece Chicken breast fillets
  • 1.5 tsp Salt
  • 0.5 tsp Pepper
  • 3 piece Carrots
  • 4 Zehe(n) Garlic
  • 3 tsp Parsley
  • 2 tsp Olive oil
  • 300 g Long grain rice
  • 50 g Parmesan in one piece (with rind)
  • 1 tbsp Lemon juice

Preparation (8 steps)

Prepare onion and celery

Peel 1 large onion and cut into coarse cubes with 3 stalks of celery. Place the prepared ingredients in the mixing bowl and chop for 5 seconds/speed 5. Then transfer.

Cook chicken breast

Thermomix® Setting
60 min/212°F/Speed 1 100

Pour 1.5 liters of water into the mixing bowl. Add 4 chicken breast fillets, the chopped onion and celery, 1.5 teaspoons of salt and 0.5 teaspoons of pepper. Cook for 60 min./100°C/speed 1. Then remove the chicken breast and let it cool. Pour the broth through a sieve and collect it.

Prepare vegetables

Peel the remaining onion and carrots and dice finely. Peel 4 cloves of garlic and place in the mixing bowl. Chop for 3 sec./speed 7. Transfer.

Chop chicken and chop parsley

Tear the cooled chicken breast into small pieces. Finely chop 3 teaspoons of parsley and set aside.

Sauté onions and carrots

Put 2 teaspoons of olive oil in the mixing bowl. Add the diced onion and sauté for 3 min./120°C/speed 1. Then add the carrots and sauté for another 4 min./120°C/speed 1.

Fry rice and garlic

2 min/248°F/Speed 1 120

Put 300 g long-grain rice and the chopped garlic in the mixing bowl, season with 0.5 tsp salt and 0.5 tsp pepper and fry everything for 2 min./120°C/speed 1.

Cook rice

20 min/212°F/Speed 1 100

Pour 600 ml of chicken broth into the mixing bowl. Grate 50 g of Parmesan in one piece and add the rind and the chicken pieces. Cook for 20 min./100°C/speed 1.

Season and finish

Thermomix® Setting
5 min/212°F/Speed 1 100

Remove the Parmesan rind from the mixing bowl. Add 1 tablespoon of lemon juice and the chopped parsley and continue cooking for 5 min./100°C/speed 1.
