Description

This spiced fried rice with sausage is a flavorful and satisfying meal that's perfect for a quick weeknight dinner or a hearty weekend brunch. I've been making this dish for years, and it's always a hit! The combination of savory sausage, fragrant spices, and colorful vegetables creates a delicious and balanced flavor profile. It's also a great way to use up leftover cooked rice. Feel free to add other vegetables you have on hand, like bell peppers or broccoli. This recipe is naturally gluten-free, making it a great option for those with dietary restrictions.

Ingredients (12 ingredients)

  • 275 g long-grain rice
  • 2 piece eggs
  • 4 tbsp garlic-infused oil
  • 1 piece red pepper
  • 2 piece carrots
  • 6 piece cooked gluten-free pork sausages
  • 3 tbsp gluten-free soy sauce
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 2 tsp caster sugar
  • 100 g frozen peas
  • 1 bunch spring onions

Preparation (7 steps)

Cook the rice

Cook the long-grain rice according to package instructions. Once cooked, drain any excess water and allow the rice to cool completely. For best results, cover and chill the rice overnight in the refrigerator.

Prepare the eggs

Crack the eggs into a small bowl. Add a pinch of salt and beat briefly using a fork until well combined.

Sauté vegetables

Add the garlic-infused oil to a large skillet or wok and heat over medium-high heat. Once hot, add the diced red pepper and carrots. Stir-fry until the vegetables are lightly browned, approximately 5 minutes.

Cook sausage and eggs

Add the cooked gluten-free pork sausages to the skillet with the vegetables. Pour the beaten egg mixture over the sausage and vegetables. Cook without stirring for about 30 seconds, then break the egg up into chunks using a wooden spoon.

Combine and season

Add the cooked rice to the skillet, breaking it up as you stir. Pour in the gluten-free soy sauce, curry powder, ground turmeric, and caster sugar. Stir well to coat the rice evenly with the seasonings.

Add peas and finish

Add the frozen peas to the skillet and stir-fry for an additional 5 minutes, or until the rice has crisped up in places and the peas are heated through.

Serve

Serve the spiced fried rice hot, topped with the chopped spring onion greens for garnish.
