Description

This hearty mushroom rice composition is a wonderfully uncomplicated dish that is prepared in no time. I like to make it when things need to be quick and I still want something warm and hearty on the table. The button mushrooms and spring onions harmonize perfectly with the rice, and the soy sauce provides a pleasant seasoning. The dish is then rounded off with fresh parsley and grated hard cheese. An ideal dish for the end of the working day or as a filling meal for the whole family. Vegetarian and simply delicious!

Ingredients (10 ingredients)

  • 250 g Rice
  • 2 clove Garlic
  • 700 g Button mushrooms
  • 3 piece Spring onions
  • 50 g Hard cheese
  • 1 bunch Parsley
  • 2 tbsp Oil
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Soy sauce

Preparation (7 steps)

Cook rice

Cook rice according to package directions in a separate pot with boiling salted water. In the meantime, continue with the next steps.

Chop garlic

Thermomix® Setting

Place 2 cloves of garlic in the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula.

Prepare button mushrooms and spring onions

Clean 700 g button mushrooms and cut into slices. Cut 3 spring onions into fine rings. Set aside green spring onion rings.

Sauté button mushrooms and spring onions

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 2 tbsp oil to the mixing bowl, add the white spring onion rings and the button mushrooms and sauté for 5 min./120°C/speed 1. Season with salt and pepper.

Sauté garlic

Thermomix® Setting
2 min/248°F/Speed 1 120

Add the chopped garlic to the button mushrooms and spring onions in the mixing bowl and sauté for another 2 min./120°C/speed 1.

Add rice and mix

Thermomix® Setting
3 min/212°F/Linkslauf Speed 1 100 Reverse

Add the cooked rice to the mixing bowl and stir in the spring onion-mushroom mixture for 3 min./100°C/reverse speed 1.

Add the green spring onion rings, 2 tbsp soy sauce, salt and pepper to the mixing bowl and stir in for 1 min./100°C/reverse speed 1. Sprinkle with 50 g grated hard cheese and 1 bunch of chopped parsley and serve.
