Description

This hearty onion soup is an absolute classic that warms you up especially on cold days. The sweetness of the caramelized onions harmonizes perfectly with the spicy Gruyère and the crispy baguette. I like to make this soup when I have guests because it can be prepared well in advance. The onions are wonderfully evenly chopped and steamed in the Thermomix®. A dash of sweet paprika powder rounds off the aroma. If you like, you can add a shot of wine. Simply delicious and a real soul warmer!

Ingredients (10 ingredients)

  • 1 kg Vegetable onion(s)
  • 5 tbsp Oil neutral
  • 2 tbsp Flour
  • 2 tsp Sugar
  • 315 ml Salt and pepper, freshly ground black
  • 1 Liter Vegetable broth strong
  • 50 g Butter
  • 5 slice Baguette(s) or toast
  • 8 tbsp Gruyère grated
  • 4 Msp. Paprika powder, sweet

Prepare onions

Thermomix® Setting
5 sec/Speed 5

Peel the vegetable onions and, depending on the desired consistency, halve or quarter them. Then put them in the mixing bowl and chop for 5 sec./speed 5. If necessary, use the spatula to push down from the edge and repeat the process.

Sauté onions

Thermomix® Setting
5 min/248°F/Speed 1 120

Add the neutral oil to the chopped onions in the mixing bowl and sauté for 5 min./120°C/speed 1 without a measuring cup until they are translucent and the onion juice has come out.

Prepare soup

20 min/212°F/Speed 1 100

Add the flour, sugar, salt and freshly ground black pepper to the onions in the mixing bowl and mix for 10 sec./speed 3. Then add the vegetable broth and simmer for 20 min./100°C/speed 1 with the measuring cup in place.

Prepare baguette

While the soup is simmering, melt the butter in a pan over medium heat. Fry the baguette slices or toast slices in it from both sides until golden brown and crispy. Alternatively, the bread slices can also be toasted in the oven at 200°C (top/bottom heat) for approx. 5-7 minutes.

Bake soup

Fill the onion soup into ovenproof bowls. Place one or more baguette slices on top of the soup. Sprinkle with grated Gruyère and sweet paprika powder. Bake the bowls in a preheated oven under the grill or in the upper area of the oven at 220°C (top/bottom heat) for approx. 3-5 minutes until golden brown.

Serve and enjoy the baked onion soup immediately.
