Description

This potato cream soup with sausages is real comfort food! I especially like to make it when it's cold outside. The potatoes make the soup nice and creamy, the mustard provides a pleasant spiciness and the sausages make it a complete dish. The preparation is super easy and quick, especially with the Thermomix®. Ideal for a quick lunch or dinner. If you like, you can sprinkle some fresh parsley over it. An absolute must for all soup lovers!

Ingredients (9 ingredients)

  • 800 g Potatoes, floury
  • 2 piece Carrot(s)
  • 1 bunch Spring onion(s)
  • 1 tbsp Butter
  • 1.5 l Vegetable stock
  • 1 tbsp Marjoram, dried
  • 150 g Whipping cream
  • 2 tbsp Dijon mustard
  • 5 piece Vienna sausages

Preparation (6 steps)

Prepare vegetables

Clean the potatoes, carrots and spring onions and cut into small pieces.

Sauté vegetables

Add butter to the mixing bowl and melt for 2 min./120°C/speed 1. Add the chopped vegetables and sauté for 3 min./120°C/speed 1.

Cook soup

20 min/212°F/Speed 1 100

Add vegetable broth and marjoram to the mixing bowl and cook for 20 min./100°C/speed 1.

Puree soup

Thermomix® Setting
30 sec/Speed 8-10

Puree the soup for 30 seconds/speed 8-10, slowly increasing the speed.

Refine soup

Thermomix® Setting
5 min/194°F/Speed 1 Linkslauf 90 Reverse

Add whipping cream and Dijon mustard and heat for 5 min./90°C/speed 1 reverse. Season with salt and pepper.

Add sausages

Thermomix® Setting
2 min/140°F/Speed 1 Linkslauf 60 Reverse

Cut the Vienna sausages into slices, add to the mixing bowl and heat for 2 min./60°C/speed 1 reverse.
