Description

These savoury muffins with aubergine and caciocavallo cheese are perfect for a delicious aperitif or a Sunday brunch. The aubergines, first fried, give a rich and intense flavour, while the grated caciocavallo cheese adds an irresistible savoury note. Ingredients (12 ingredients)

  • 250 piece Flour
  • 2 piece Eggs
  • 50 ml Extra virgin olive oil
  • 100 ml Milk
  • 1 packet Baking powder for savoury cakes
  • 1 pinch Salt
  • 2 piece Aubergines
  • 80 g Caciocavallo cheese
  • 0.5 bunch Mint
  • 50 ml Extra virgin olive oil
  • 1 pinch Black pepper
  • 1 pinch Salt

Preparation (8 steps)

Preparation of the aubergines

Remove the ends from the aubergines and cut them into cubes. Put the cubes in a bowl with salt and let them rest for 30 minutes to eliminate the bitter water.

Frying the aubergines

Rinse the aubergines well under running water and squeeze them with your hands to eliminate excess water. Fry the aubergines in abundant extra virgin olive oil in a pan until golden brown. Drain them on absorbent paper.

Preparation of the dough

Insert the eggs and extra virgin olive oil into the bowl and mix for 20 Sec./Stufe 4.

Addition of dry ingredients

Add the flour, grated caciocavallo cheese and salt to the bowl. Mix for 10 Sec./Stufe 3.

Addition of milk and eggs

Add the milk in a stream and the egg and oil mixture. Mix for 20 Sec./Stufe 4.

Add the baking powder for savoury cakes and the black pepper. Mix for 15 Sec./Stufe 3.

Incorporation of the aubergines and mint

Add the fried aubergines and the chopped mint. Mix with a spatula to gently blend.

Pour the mixture into the muffin tins. Bake in a preheated static oven at 180°C for about 30 minutes.
