Description

This savory pie with eggplant and ham is a real treat! I especially like to make it in the summer when eggplants are in season and develop their full flavor. The combination of the salty ham, the slightly bitter eggplant, and the creamy Scamorza is simply irresistible. The preparation is very simple and can be done in no time with the Thermomix®. Perfect for a quick lunch or a cozy dinner with friends. A true classic of Italian cuisine that is always well received!

Ingredients (7 ingredients)

  • 1 pack Puff pastry
  • 1 piece Eggplant
  • 150 g Cooked ham
  • 150 g Scamorza
  • 1 piece Egg
  • 2 tbsp Sesame seeds
  • 1 pinch Salt

Preparation (8 steps)

Prepare eggplants

Wash an eggplant, remove the ends and cut into slices. Set the eggplant slices aside.

Grill eggplants

Heat a grill plate or a coated pan. Place the eggplant slices on the plate, lightly salt and grill from both sides until cooked. Set the grilled eggplants aside.

Prepare dough

Roll out a roll of puff pastry on a cake pan. Prick the bottom with a fork.

Cover

Cover the puff pastry base with slices of cooked ham. Add a layer of grilled eggplants and a layer of Scamorza on top.

Cover and seal

Place the second roll of puff pastry on top and lightly press the edges with your fingers. Cut off excess dough with scissors.

Make punctures

Make incisions on the surface with a knife to allow the steam to escape.

Brush and decorate

Whisk an egg and brush the surface of the pie with it. Sprinkle with sesame seeds.

Bake

Bake the pie in a preheated oven at 200°C for about 30 minutes until golden brown.
