Description

This hearty zucchini tomato omelet is an absolute highlight when you need something quick and the fridge has a few leftover vegetables. I especially like to make it in the summer when zucchini and tomatoes are in season. The combination of the fresh vegetables, eggs and basil is simply unbeatable. The preparation is very simple and doesn't take long. Perfect for a light lunch or a quick dinner. If you like, you can sprinkle some grated cheese on top. A great vegetarian dish that also tastes good to children!

Ingredients (9 ingredients)

  • 2 piece Zucchini
  • 1 clove Garlic
  • 100 g Cherry tomatoes
  • 2 tbsp Olive oil
  • to taste Salt
  • 6 piece Eggs (size M)
  • to taste Pepper
  • 150 g Peeled broad beans (fresh or frozen)
  • 2 Stiele Basil

Preparation (7 steps)

Prepare zucchini and garlic

Wash 2 zucchini and cut into slices. Peel 1 clove of garlic and place in the mixing bowl. Chop for 3 sec./speed 7. Scrape down with the spatula.

Sauté vegetables

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 2 tbsp olive oil and the zucchini slices to the mixing bowl and sauté for 5 min./120°C/speed 1.

Add tomatoes

Thermomix® Setting
3 min/212°F/Speed 1 100

Wash 100 g cherry tomatoes, halve and add to the mixing bowl together with salt. Cook for a further 3 min./100°C/speed 1.

Whisk eggs

Thermomix® Setting
20 sec/Speed 3

Add 6 eggs (size M), pepper and 150 g peeled broad beans (fresh or frozen) to the mixing bowl and mix for 20 sec./speed 3.

Mix vegetable and egg mixture

Add the sautéed vegetables from the mixing bowl to the egg mixture and mix carefully.

Bake frittata

30 min/Varoma/Speed 1 Varoma

Line the mixing bowl with baking paper and fold the baking paper approx. 5 cm up at the edge. Add the vegetable-egg mixture to the mixing bowl and cook for 30 min./Varoma/speed 1.

Garnish frittata

Wash 2 sprigs of basil, pluck the leaves from the sprigs, chop coarsely and sprinkle the finished frittata with it.
