Description

This dish is a true classic of Italian cuisine! Tender chicken scaloppine, enveloped in a creamy mushroom sauce – simply irresistible. I especially like to make Scaloppine di Pollo ai Funghi when I need to be quick, but still want something special on the table. Preparation with the Thermomix® is super easy and saves time. Perfect for a cozy dinner with friends or family. A splash of white wine and fresh parsley round off the dish and give it a fine note. Try it out, you will be thrilled!

Ingredients (8 ingredients)

  • 600 g sliced chicken breast
  • 300 g mushroom
  • 00 flour
  • 0.5 bicchiere white wine
  • 1 clove garlic
  • parsley
  • olive oil
  • fine salt

Preparation (8 steps)

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Put 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula.

Sauté mushrooms

Thermomix® Setting
10 min/212°F/Speed 1 100

Add some olive oil to the mixing bowl, add the chopped garlic and sauté for 3 min./120°C/speed 1. Add 300 g sliced mushrooms and cook for 10 min./100°C/speed 1. Season with salt.

Transfer mushrooms

Remove the cooked mushrooms from the mixing bowl and transfer to a bowl. Clean the mixing bowl.

Prepare chicken

Salt 600 g chicken breast fillets (cut into thin slices) and turn in flour.

Fry chicken

Heat some olive oil in a pan and fry the floured chicken breast fillets in it from both sides.

Deglaze with wine

Deglaze the chicken breast fillets with ½ glass of white wine and continue to cook for 4-5 minutes until the wine is reduced.

Add mushrooms

Add the cooked mushrooms to the chicken breast fillets in the pan and simmer briefly (approx. 1 minute).

Garnish with parsley

Finally, sprinkle chopped parsley over the Scaloppine di Pollo ai Funghi and serve.
