Description

This Thermomix® recipe makes a hearty black bread from wheat and rye meal, wheat flour, buttermilk and beet syrup. Preparation in the Thermomix® takes about 240 minutes, with an active working time of about 30 minutes. This recipe is ideal for bread lovers and is suitable for breakfast as well as a side dish to the main course. Thanks to the simple preparation with the Thermomix®, baking bread is also suitable for beginners. This recipe yields [Anzahl] servings.

  • 280 g Wheat meal
  • 280 g Rye meal
  • 500 g Wheat flour type 550
  • 1 L Buttermilk
  • 200 g Beet syrup
  • 1.33 Päckchen Fresh yeast (63g)
  • 100 g Sunflower seeds
  • 100 g Pumpkin seeds
  • 100 g Linseed
  • 100 g Sesame
  • 1 EL Salt

Heat the buttermilk

Put the buttermilk in the mixing bowl and heat for 3 min./37°C/speed 2.

Dissolve the yeast

Add the yeast to the warm buttermilk and mix for 20 sec./speed 3 to dissolve it.

Add beet syrup and salt

Thermomix® Setting
10 sec/Speed 3

Add beet syrup and salt and mix for another 10 sec./speed 3.

Add seeds

Add sunflower seeds, pumpkin seeds, linseed and sesame to the mixing bowl and mix for 15 sec./reverse/speed 2.

Add flour and meal

Thermomix® Setting
2 min/Kneading speed

Add wheat meal, rye meal and wheat flour type 550 to the mixing bowl. Insert Patix dough knife and knead for 2 min./kneading setting to form a dough.

Shape and bake the dough

Place the dough in two oiled loaf pans, smooth and flatten. Bake in a preheated oven for 30 minutes at 50°C, then increase the oven to 130°C and bake for 3 hours.

Let cool

Remove the loaf pans from the oven and let the loaves cool in them before removing them from the pans.
