Description

These pork medallions with lemon are a Mediterranean delight that I prepare often. The meat is tender and juicy, with a citrus touch that makes it irresistible. The lemon sauce, with its hint of rum, gives it a special flavor. It is a perfect dish for a family meal or a dinner with friends. It is prepared in a short time with the Thermomix®, which makes it an ideal option for those days when you do not have much time to cook. Accompany it with a mashed potatoes or rice and you will have a complete and delicious dish!

Ingredients (9 ingredients)

  • 500 gramos Pork loin
  • 100 gramos Margarine
  • 2 cucharadas soperas Oregano
  • 140 gramos Wheat flour
  • 3 piece Lemons
  • 1 cucharadita Garlic paste
  • 100 mililitros Rum
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation (8 steps)

Prepare the seasoning

In a bowl, mix 140 g of wheat flour, 2 tablespoons of oregano, a pinch of salt and a pinch of pepper. Stir well to integrate all the ingredients. Set aside.

Salt and pepper the meat

Salt and pepper 500 g of pork loin cut into medallions. Set aside.

Coat the medallions

Coat the loin medallions in the flour and seasoning mixture prepared previously. Make sure they are well covered in flour.

Melt the margarine

Place 100 g of margarine in a pan and heat over medium heat until melted.

Fry the medallions

Fry the breaded pork medallions in the melted margarine on both sides until desired doneness. Remove the medallions and set aside.

Prepare the lemon sauce

Thermomix® Setting
5 min/176°F/Velocidad 2 80

Pour the juice of 3 lemons, 100 ml of rum and 1 teaspoon of garlic paste into the Thermomix glass. Program 5 Min./80°C/Speed 2.

Add the margarine and mix

Thermomix® Setting
1 min/140°F/Velocidad 3 60

Add 1 tablespoon of margarine to the Thermomix glass and program 1 Min./60°C/Speed 3 to integrate the margarine into the sauce.

Serve

Serve the medallions and bathe with the lemon sauce. Decorate each plate with a couple of lemon slices.
