Description

This recipe for pork liver in onion sauce is a hearty main course that takes about 45 minutes to prepare and serves 4. The liver is seared in a separate pan and then cooked in an aromatic onion sauce in the Thermomix®. Ideal for lovers of traditional home cooking and an inexpensive meal.

Ingredients (13 ingredients)

  • 500 g Pork Liver
  • 500 g Onions
  • 40 g Oil
  • 1 EL Mustard
  • 1 EL Tomato Paste
  • 1 TL Marjoram
  • 1 TL Thyme
  • 1 TL Salt
  • 0.5 TL Pepper
  • 1 Prise Sugar
  • 100 ml Red Wine
  • 200 ml Vegetable Broth
  • 1 EL Sauce Thickener

Preparation (10 steps)

Prepare onions

Peel and quarter 500g onions.

Chop onions

Place the quartered 500g onions in the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Add 40g oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare liver

Cut 500g pork liver into slices about 1 cm thick.

Sear liver

Sear the 500g pork liver in a separate pan with some oil until it has browned on both sides. Then remove the liver from the pan and set aside.

Add sauce ingredients

Add 1 tbsp mustard, 1 tbsp tomato paste, 1 tsp marjoram, 1 tsp thyme, 1 tsp salt, 1/2 tsp pepper, 1 pinch of sugar, 100 ml red wine and 200 ml vegetable broth to the sautéed onions in the mixing bowl.

Simmer sauce

Simmer the sauce in the mixing bowl for 10 min./100°C/speed 1.

Add liver and finish cooking

Add the seared 500g pork liver to the sauce in the mixing bowl and cook for a further 5 min./100°C/Reverse speed 1. Leave the measuring cup on.

Stir in sauce thickener

1 min/212°F/Linkslauf Speed 1 212°F Reverse

Stir in 1 tbsp sauce thickener and mix for 1 min./100°C/Reverse speed 1. Leave the measuring cup on.

Season and serve

Season the pork liver in onion sauce with salt and pepper and serve.
