Description

This saithe velouté with saffron is a comforting and fragrant soup, perfect for autumn evenings. I love the sweetness of the leek and potato which blend perfectly with the fish and saffron. It's a simple dish to make with the Thermomix®, which gives a velvety and smooth texture in no time. Ideal for a light dinner or a refined appetizer. Feel free to add some croutons for extra indulgence! A real treat for the taste buds.

Ingredients (11 ingredients)

  • 25 cl fresh cream
  • 40 g butter
  • chervil sprigs
  • salt
  • pepper
  • some saffron stigmas
  • 2 egg yolks
  • 1 piece saithe head
  • 3 leek whites detailed in slices
  • 4 potatoes in pieces
  • 250 g saithe

Preparation (6 steps)

Leeks and butter

Thermomix® Setting
3 min/248°F/Speed 1 120

Put the 40g of butter and the 3 leek whites detailed in slices into the Thermomix bowl. Brown for 3 Min./120°C/Stufe 1.

Cooking vegetables and fish

Thermomix® Setting
20 min/212°F/Speed 1 100

Add water to cover the leeks, the 4 potatoes in pieces and the saithe head. Also add the 250g of saithe. Salt and pepper. Bring to a boil for 20 Min./100°C/Stufe 1.

Fish preparation

Remove the fish from the bowl to remove bones and skins. Put the cleaned fish back into the soup. Reserve the head.

Mix the soup

Mix the soup for 30 Sek./Stufe 8.

Preparation of cream with egg yolks

In a bowl, dilute the 2 egg yolks in the 25 cl of fresh cream. Add a little hot soup, mix well.

Finalization of the soup

5 min/158°F/Gentle stir speed/Linkslauf 70 Reverse

Pour this preparation into the soup and simmer over low heat for 5 Min./70°C/Sanftrührstufe/Linkslauf. Sprinkle with chervil sprigs before serving.
