Description

This noodle cauliflower casserole with mushrooms from the Thermomix® is a simple, vegetarian and vegan main course. The main ingredients are noodles, cauliflower and mushrooms, refined with garlic and Italian herbs. With a preparation time of 60 minutes, including 40 minutes of working time, you get 4 servings. The casserole is ideal for light, vegetarian cuisine and is a delicious family meal.

Ingredients (15 ingredients)

  • 300 g Noodles
  • 500 g Cauliflower
  • nach Geschmack Salt
  • 400 ml Vegetable broth
  • 2 Stück Garlic cloves
  • 80 ml vegan cooking cream
  • 2 TL dried Italian herbs
  • 0.5 TL Chili flakes
  • nach Geschmack Pepper
  • 1 Stück Onion
  • 350 g Mushrooms
  • 150 g Spinach (fresh or frozen)
  • 1 EL Oil
  • Oil for greasing
  • 200 g vegan grated cheese

Preparation (11 steps)

Cook noodles

Put 300 g noodles in a pot and cook al dente in salted water according to package instructions. Then pour through a sieve and set aside.

Prepare cauliflower

Clean, wash and cut 1 medium-sized cauliflower (approx. 500 g) into florets.

Cook cauliflower

Put cauliflower florets in a pot, cover with salted water and cook for 15-20 minutes until the cabbage is soft. Then drain.

Chop garlic

Peel 2 garlic cloves, put them in the mixing bowl and chop for 3 sec./speed 7.

Prepare cauliflower sauce

Put cooked cauliflower, 400 ml vegetable broth, the chopped garlic, 80 ml vegan cooking cream, 2 tsp dried Italian herbs, ½ tsp chili flakes, salt and pepper in the mixing bowl and puree until creamy for 30 sec./speed 8-10. If necessary, push down with the spatula and repeat.

Chop onion

Peel 1 onion, halve it, put it in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté onion

Add 1 tbsp oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare mushrooms and spinach

Clean 350 g mushrooms and cut into slices. Wash and roughly chop 150 g spinach (fresh or frozen).

Sauté mushrooms and spinach

Add the sliced mushrooms and spinach to the onions in the mixing bowl and sauté for 5 min./120°C/reverse rotation speed 1. Season with salt and pepper.

Mix casserole

Put cooked noodles, cauliflower sauce, mushrooms and spinach in a large bowl and mix everything together.

Bake casserole

Grease a casserole dish. Fill the noodle mixture into the casserole dish, sprinkle 200 g vegan grated cheese on top and bake in a preheated oven at 200 °C for approx. 20 minutes.
