Description

This shakshuka recipe with chickpeas is a vegetarian main course that is ideal for brunch or a hearty breakfast. The preparation is simple and quick, making it also suitable for student kitchens. The combination of tomatoes, peppers, chickpeas and eggs makes it a healthy and filling dish. Garnished with fresh coriander, it is a real treat.

Ingredients (13 ingredients)

  • 2 Stück Onions
  • 2 Stück Garlic cloves
  • 40 ml Olive oil
  • 1 Stück red pepper
  • 400 g chopped tomatoes (canned)
  • 1 TL smoked paprika powder
  • 0.5 TL Cumin
  • 0.25 TL Chili powder
  • 400 g Chickpeas (canned)
  • 4 Stück Eggs
  • Salt
  • Pepper
  • fresh coriander

Preparation (6 steps)

Chop onions and garlic

Peel and quarter 2 onions and place 2 garlic cloves in the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push down.

Sauté onions and garlic

Add 40 ml olive oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add vegetables and simmer

Add 1 red pepper, cored and in pieces, 400 g chopped canned tomatoes, 1 tsp smoked paprika powder, 1/2 tsp cumin, 1/4 tsp chili powder, salt and pepper and simmer for 10 min./100°C/speed 1.

Add chickpeas

Add 400 g chickpeas, drained and rinsed, and simmer for a further 5 min./100°C/speed 1.

Add eggs and let set

Use a spoon to press 4 wells into the sauce and slide 1 egg into each. Simmer for a further 5-7 min./100°C/speed 1 until the eggs have set.

Sprinkle with fresh coriander and serve.
