Description

Shortcrust pastry cookies with strawberry filling are a simple Thermomix® recipe for Christmas cookies. The main ingredients are wheat flour, butter, icing sugar and strawberry jam. Preparation takes about 100 minutes and yields 20 servings. Ideal as finger food and dessert for the whole family in winter.

Ingredients (7 ingredients)

  • 250 g Wheat flour Type 405
  • 80 g Icing sugar
  • 125 g Butter (cold)
  • 1 Pck. Vanilla sugar
  • 1 TL Cream of tartar baking powder
  • 1 Stück Egg (room temperature)
  • 50 g Strawberry jam

Preparation (6 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 250 g wheat flour type 405, 80 g icing sugar, 125 g cold butter in cubes, 1 pack. vanilla sugar, 1 tsp cream of tartar baking powder and 1 egg (room temperature) into the mixing bowl and process for 2 min./kneading stage to a smooth dough.

Cool dough

Remove the dough from the mixing bowl, wrap in cling film and place in the refrigerator for 30 minutes.

Preheat oven and roll out dough

Preheat the oven to 200 °C top/bottom heat. Roll out the chilled dough on a lightly floured work surface to approx. 5 mm thick.

Cut out cookies

Cut out the dough with cookie cutters. Cut a hole in the middle of half of the cookies with a smaller cutter. Place the cookies on a baking sheet lined with baking paper.

Bake cookies

Slide the baking sheet into the preheated oven and bake the cookies for approx. 10-15 minutes until golden yellow.

Fill cookies

Let the baked cookies cool on a wire rack. Spread 1/2 tsp of strawberry jam on each of the cookies without a hole and place the cookies with a hole on top.
