Description

This dish is a real treat and super quick to prepare! The combination of juicy shrimp, fresh peas and creamy rice is simply unbeatable. I especially like to make it when things need to be quick, but you still want something special on the table. The light garlic note harmonizes perfectly with the sweet peas and rice. A dash of lemon juice provides the necessary freshness. Perfect for a light lunch or dinner!

Ingredients (12 ingredients)

  • 200 g Long grain rice
  • to taste Salt
  • 250 g Frozen peas
  • 250 g Ready-to-cook shrimp
  • 1 piece Onion
  • 2 clove Garlic
  • 2 tbsp Butter
  • 100 ml Vegetable broth
  • 150 g Whipping cream
  • 1 tbsp Light sauce thickener
  • 1 tbsp Lemon juice
  • to taste Pepper

Preparation (7 steps)

Cook rice and peas

Thermomix® Setting
25 min/212°F/Speed 1 100

Add 200 g long grain rice, some salt and 500 ml water to the mixing bowl and cook for 25 min./100°C/speed 1 with simmering basket. 5 minutes before the end of the cooking time, add 250 g frozen peas to the simmering basket.

Prepare shrimp

Rinse 250 g ready-to-cook shrimp and pat dry.

Chop onion and garlic

Peel 1 onion, quarter it and put it in the mixing bowl. Chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7.

Sauté onion and garlic

Thermomix® Setting

Add 2 tbsp butter and sauté for 3 min./120°C/speed 1.

Prepare sauce

Thermomix® Setting

Add 100 ml vegetable broth and 150 g whipping cream and bring to the boil for 5 min./100°C/speed 2.

Thicken sauce

Thermomix® Setting
1 min/212°F/Speed 2 100

Sprinkle in 1 tbsp light sauce thickener and simmer for 1 min./100°C/speed 2.

Add shrimp and season

Thermomix® Setting
1 min/194°F/Linkslauf Speed 1 90 Reverse

Add shrimp to the sauce and heat for 1 min./90°C/reverse rotation speed 1. Season with 1 tbsp lemon juice, salt and pepper.
