Description

  • 250 g Skyr
  • 1 piece Egg
  • 1 pinch Sugar
  • 1 tsp Salt
  • 1 Pck Baking Powder

Prepare dough

Thermomix® Setting

Add 370g spelt flour, 250g Skyr, 1 egg, 1 pinch of sugar, 1 tsp salt and 1 packet baking powder to the mixing bowl and process into a dough for 2 min./kneading stage.

Remove the dough from the mixing bowl and form 8-10 buns.

Place the buns on a baking sheet lined with baking paper and bake in a preheated oven at 200°C for 25 minutes.

About this recipe

Skyr buns have become a staple in our home since I recently looked for a way to incorporate the high protein content of Skyr into a quick, everyday recipe. I still remember getting fresh buns for breakfast at my grandma's house as a child. This Skyr version is a little different, but it brings back that feeling of security and homemade. The spelt flour forms the basis for the buns and provides a slightly nutty note. It is a little heartier than wheat flour and gives the buns a pleasant texture. The Skyr, an Icelandic dairy product, is the star of the recipe. It not only gives the buns a juicy consistency, but also a decent portion of protein. The egg serves as a binder and ensures a beautiful, golden brown color. A pinch of sugar supports the yeast activity (even if we use baking powder here, it helps the dough to rise a little) and rounds off the taste. The salt is of course essential to highlight the flavors. And the baking powder ensures that the buns are nice and loose and fluffy. When preparing in the Thermomix®, it is important to add the ingredients in the order indicated. This ensures that everything is mixed well. The kneading stage is ideal for obtaining a homogeneous dough. If the dough is too sticky, you can add some flour. After kneading, it is best to let the dough rest briefly before forming the buns. This makes processing easier. Before baking, the buns can be brushed with a little milk or egg yolk to obtain a particularly shiny surface. If you like, you can also sprinkle them with seeds such as sesame or flaxseed. The recipe is already ideally suited for a vegetarian version. If you like it vegan, you can replace the egg with an egg substitute (e.g. applesauce or flaxseed meal with water). There are no limits to the imagination when it comes to spices. Caraway, fennel seeds or dried herbs such as rosemary or thyme go perfectly with the Skyr buns. A pinch of chili or smoked paprika powder can also provide an interesting flavor. The Skyr buns taste pure, with butter and jam, but also with savory spreads such as cream cheese, avocado or hummus. They go perfectly with a brunch with eggs, bacon and salmon. They are also a delicious alternative to traditional bread as a side dish to soups or salads. The buns can be stored well. It is best to store them in a bread bin or paper bag to protect them from drying out. They are also ideal for freezing. If necessary, they can then be reheated in the oven or toaster. For quick preparation, the dough can also be prepared the night before and stored in the refrigerator. The next morning, only the buns have to be formed and baked.
