This Tropical Green Smoothie is a recipe that evolved from my quest to sneak more greens into my diet without sacrificing flavor. I used to dread the thought of green smoothies, picturing them as bitter and unappetizing. But after experimenting with different combinations, I discovered that the right balance of fruits and vegetables can create a truly delicious and refreshing drink. The frozen mango is the star of the show, providing a creamy texture and a natural sweetness that masks any bitterness from the spinach and zucchini. Using frozen mango is key for achieving that perfect smoothie consistency – it eliminates the need for a ton of ice, which can dilute the flavor. The lemon juice adds a bright, tangy counterpoint to the sweetness of the mango, preventing the smoothie from becoming overly cloying. It also helps to preserve the vibrant green color of the spinach. Fresh spinach is, of course, the green powerhouse, packed with vitamins and minerals. Don't be afraid of the amount – you won't even taste it! The zucchini, surprisingly, adds a subtle creaminess and body to the smoothie without contributing a strong flavor. I leave the skin on for added nutrients and fiber. A touch of melted coconut oil lends a subtle tropical aroma and a silky mouthfeel. When preparing this smoothie in the Thermomix®, it's important to add the ingredients in the order listed. This helps to ensure that the blades can easily break down the frozen mango and spinach. The Thermomix® is a powerful blender, but starting with the softer ingredients at the bottom can prevent it from getting bogged down. I usually scrape down the sides of the bowl once or twice during the blending process to make sure everything is evenly incorporated.
