Description

This game meat soup is a hearty and warming dish that tastes especially good in the cold season. I like to make it with venison or roe deer, but other game meat is also excellent. The combination of the strong meat, the root vegetables and the forest mushrooms makes this soup a special taste experience. A dash of red wine and a dollop of cranberries round it off. The preparation takes a while, but it's worth it! Perfect for a festive meal or just to warm up on a cold day. The soup can also be prepared well in advance and frozen in portions.

Ingredients (19 ingredients)

  • 500 g Lean game meat (venison or roe deer)
  • 150 g Streaky bacon
  • 1 Stange Leek
  • 1 Stück Celeriac
  • 1 Petersilienwurzel(n) Parsley root
  • 1 Liter Game stock
  • 1 Lorbeerblatt Bay leaf
  • 2 Gewürznelke(n) Clove
  • 4 Pfefferkörner Peppercorns
  • Sauce thickener
  • Flour
  • 150 ml Dry red wine
  • 2 EL Cranberries
  • Salt
  • Pepper from the mill
  • 1 Glas Chanterelles extra small
  • Tabasco
  • 125 ml Cream
  • 1 EL Parsley chopped

Preparation (12 steps)

Prepare vegetables

Clean the leek, celeriac and parsley root and cut into bite-sized pieces. Also cut the game meat into cubes. Cut the bacon into small cubes.

Render bacon

Render the diced bacon in a pan without fat, then remove from the pan and set aside.

Fry meat

Fry the meat cubes vigorously in the rendered bacon fat in the pan, then remove from the pan and set aside.

Chop vegetables

Sauté vegetables

Add the chopped vegetables to the mixing bowl and sauté for 3 min./120°C/speed 1.

Add the fried meat, rendered bacon, game stock, bay leaf, cloves and peppercorns (in a spice egg or tea filter) to the mixing bowl. Simmer for 90 min./100°C/speed 1/reverse.

Remove spices

After the cooking time, remove the spice egg or tea filter with the spices from the mixing bowl.

Thicken soup

If desired, thicken the soup with sauce thickener or mixed flour. To do this, add sauce thickener or mixed flour to the mixing bowl and stir for 10 sec./speed 3.

Add cream

Add the cream to the mixing bowl and bring to the boil briefly for 3 min./90°C/speed 1/reverse.

Season vigorously with red wine, salt, pepper, Tabasco and cranberries and simmer for 5 min./90°C/speed 1/reverse until the taste is rounded.

Add the chanterelles to the mixing bowl and heat for 2 min./90°C/speed 1/reverse.
