Description

This creamy pumpkin cream soup with a fruity-spicy apple-ginger chutney is a real highlight for the cold season. I particularly like to make it in autumn when the pumpkin is fresh from the field. The sweetness of the pumpkin harmonizes wonderfully with the slight spiciness of the ginger and the fruity acidity of the apple. The chutney gives the soup a special kick and makes it an unforgettable taste experience. Preparation with the Thermomix® is child's play and quick. A great dish for a festive menu or just for a cozy evening at home. The soup is vegetarian and can be prepared well.

Ingredients (12 ingredients)

  • 1 piece Butternut squash
  • 1 piece large vegetable onion
  • 50 g Ginger
  • 75 g Oil
  • 1 tbsp Salt
  • 300 ml White wine
  • 1 l Vegetable stock
  • 500 ml Coconut milk
  • 3 piece Apples
  • 1 tbsp grated ginger
  • 100 ml Apple juice naturally cloudy
  • 1 piece small Chili

Preparation (9 steps)

Prepare pumpkin, onion and ginger

Peel, core and cut the pumpkin into approx. 2-3 cm pieces. Peel and dice the vegetable onion and ginger.

Sauté onion and ginger

Put 75 g oil in the mixing bowl, add the onion and ginger cubes, 1 tbsp salt and some sugar and sauté for 3 min./120°C/level 1.

Sauté pumpkin and deglaze

Thermomix® Setting
3 min/212°F/Speed 1 100

Add the pumpkin pieces to the mixing bowl and sauté for 3 min./120°C/level 1. Deglaze with 300 ml white wine and simmer for 3 min./100°C/level 1 without a measuring cup.

Cook soup

Add 1 l vegetable broth and cook for 20 min./100°C/level 1.

Puree soup

30 sec/Speed 10

Add 500 ml coconut milk and puree for 30 sec./level 10.

Season soup

Season the soup with salt and pepper and keep warm.

Prepare apples

Wash, core and cut the apples into small pieces. Prepare 1 tbsp grated ginger and 1 small chili (pitted).

Prepare caramel

Caramelize some sugar in a saucepan. Deglaze with some wine and add the grated ginger. Simmer until the wine has almost completely dissolved.

Cook apple chutney

Add the apple pieces and 100 ml apple juice. Simmer everything over low heat until the apples have become soft. Stir occasionally. Remove the chili before serving. If necessary, season with a little lemon juice or add a pinch of pepper.
