Description

This Champagne Sorbet is a refreshing dessert, ideal for festive occasions. With just a few ingredients like champagne, sugar and lemon juice, it is easy to prepare and perfect for New Year's Eve or birthdays. The preparation time is about 20 minutes, plus freezing time. The sorbet is a light and elegant dessert for 6 servings.

Ingredients (4 ingredients)

  • 250 g Sugar
  • 250 ml Water
  • 750 ml Champagne
  • 2 EL Lemon juice

Preparation (6 steps)

Mix sugar and water

Put 250 g sugar and 250 ml water into the mixing bowl and stir for 10 sec./level 3.

Cook sugar syrup

Thermomix® Setting
10 min/212°F/Speed 1 212°F

Close the mixing bowl with the measuring cup attached and cook the sugar-water mix for 10 min./100°C/level 1.

Cool sugar syrup

Let the sugar syrup cool completely. This can be accelerated by transferring the syrup to another container and placing it in the refrigerator.

Add champagne and lemon juice

Put the cooled sugar syrup back into the mixing bowl. Add 750 ml champagne and 2 tbsp lemon juice and stir for 5 sec./level 2.

Freeze sorbet

Pour the mixture into a freezer-safe container and freeze for at least 3 hours, preferably overnight.

Mix sorbet until creamy

20 sec/Speed 6, dann 10 sec/Speed 6

Break the frozen sorbet into pieces and place in the mixing bowl in portions. Mix for 20 sec./level 6, then push down with the spatula and mix for another 10 sec./level 6 until a creamy consistency is achieved. Repeat if necessary.
