Description

This Asian fish soup with rice noodles is a comforting and flavourful dish, perfect for cold days. The combination of fresh fish, aromatic spices such as galangal, kaffir lime leaves and lemongrass, along with the spicy touch of ginger, creates a unique taste experience. I often prepare it in winter, and it is always a success. The aubergine and bell pepper add a touch of sweetness that balances the whole.   • 500 gramos Fish heads
  • 10 gramos Galangal
  • 5 gramos Dried kaffir leaves
  • 5 gramos Dried lemongrass
  • 5 gramos Ginger
  • 1 piece Red onion
  • 2 dientes Garlic
  • 1 puñado Cilantro stems and roots
  • 10 mililitros Soy sauce
  • 10 mililitros Oyster sauce
  • 10 gramos Cilantro
  • 100 gramos Rice noodles
  • 30 gramos Chinese roots
  • 0.5 piece Aubergine
  • 0.5 piece Bell pepper
  • 80 gramos Orellanas (mushrooms)
  • 1 pinch Salt

Prepare ingredients

List all the ingredients: 500 grams of fish heads, 10 grams of galangal, 5 grams of dried kaffir leaves, 5 grams of dried lemongrass, 5 grams of ginger, 1 unit of red onion, 2 cloves of garlic, 1 handful of cilantro stems and roots, 10 milliliters of soy sauce, 10 milliliters of oyster sauce, 10 grams of cilantro, 100 grams of rice noodles, 30 grams of Chinese roots, ½ unit of aubergine, ½ unit of bell pepper, 80 grams of orellanas (mushrooms) and 1 pinch of salt.

Prepare the base broth

In the Thermomix bowl, add the fish heads (completely clean), ginger, galangal, kaffir lime leaves, lemongrass, onion cut into pieces, macerated garlic, cilantro stems and roots. Program 40 min/98°C/Speed 2.

Remove the fish heads

Remove the fish heads from the Thermomix bowl. Program 20 min/100°C/Speed 2.

Strain the broth and add vegetables

Strain the fish broth. Pour the strained broth back into the Thermomix bowl. Add the aubergine cut into small cubes, the bell pepper in strips, the orellanas and a pinch of salt. Program 20 min/100°C/Speed 1.

Add the soy sauce, oyster sauce and rice noodles to the Thermomix bowl. Correct the flavour with salt if necessary. Program 3 min/100°C/Speed 1/Reverse direction.

Serve the hot broth and decorate the dish with Chinese roots and fresh cilantro.
