Description

This potato and chicory soup is a wonderfully creamy and slightly bitter dish that is particularly warming in the colder months. I like to make it when I want something hearty and easily digestible at the same time. The combination of potatoes and chicory is surprisingly delicious and the cream ensures a nice creaminess. If you like, you can add some shrimp or salmon strips as a topping. Preparation in the Thermomix® is super easy and quick, so the soup is on the table in no time. An absolute feel-good dish!

Ingredients (9 ingredients)

  • 400 g Potato(es)
  • 2 piece Chicory
  • 1 piece Onion(s)
  • 600 ml Vegetable broth
  • 125 ml Cream
  • 200 g North Sea crabsCrayfish meat or salmon strips
  • 2 tbsp Clarified butter
  • 1 etwas Salt
  • 1 etwas Pepper

Preparation (7 steps)

Prepare onion and potatoes

Peel, wash and dice 400 g potatoes. Peel and quarter 1 onion.

Chop and sauté onion

3 min/248°F/Speed 1 120

Place the onion in the mixing bowl and chop for 3 sec./speed 5. Add 2 tbsp clarified butter and sauté for 3 min./120°C/speed 1.

Add potatoes and broth

20 min/212°F/Speed 1 100

Add the diced potatoes to the mixing bowl. Add 600 ml vegetable broth and cook for 20 min./100°C/speed 1.

Prepare and add chicory

5 min/212°F/Speed 1 100

Clean 2 chicory heads, remove the stalk and cut into strips. Set aside a small portion of the chicory strips for garnish. Add the remaining chicory to the mixing bowl and cook for 5 min./100°C/speed 1.

Puree soup

30 sec/Speed 8-10

Puree the soup for 30 sec./speed 8-10, slowly increasing the speed.

Add cream and season

Thermomix® Setting
2 min/176°F/Speed 1 80

Add 125 ml cream and stir in for 2 min./80°C/speed 1. Season with salt and pepper.

Serve

Fill the soup into bowls and garnish with the remaining chicory strips and 200 g North Sea crabs, crayfish meat or salmon strips.
