Description

This vanilla strawberry soup is a light and refreshing dessert, perfect for hot spring or summer days. I often prepare it for a Sunday brunch or dinner with friends. Vanilla brings a touch of subtle sweetness that blends wonderfully with the acidity of fresh strawberries. It's a simple dessert to make, but it always has its little effect. Feel free to add a few fresh mint leaves for an extra touch of freshness. Let rest in the fridge for optimal tasting. A real fruity delight!

Ingredients (4 ingredients)

  • of mint
  • 2 tbsp of agave syrup
  • 4 tbsp of vanilla cane sugar
  • 1 kg of strawberries

Preparation (6 steps)

Preparation of the strawberries

Wash 1 kg of strawberries carefully and remove the stems. Set aside about ten strawberries for decoration.

Mix the strawberries

Put the rest of the strawberries in the Thermomix bowl. Add 4 tbsp of vanilla cane sugar and 2 tbsp of agave syrup.

Mixing and blending

Mix everything for 20 Sec./Level 8. Scrape the sides of the bowl with the spatula if necessary and mix again for 10 Sec./Level 4.

Mix again for 10 Sec./Level 4 to ensure a homogeneous consistency.

Plating and decoration

Divide the strawberry soup into verrines. Cut the reserved strawberries into small pieces and scatter them in each verrine. Decorate with a few fresh mint leaves.

Refrigeration

Put the verrines in the refrigerator for at least 2 hours before serving for optimal tasting.
