Description

This simple, yet incredibly flavorful pasta dish is a true classic of Roman cuisine. The combination of spicy pepper and creamy Pecorino Romano is simply unbeatable. I often make Cacio e Pepe when I need something quick and still want to put something special on the table. The preparation is child's play and succeeds in no time with the Thermomix®. Perfect for a cozy evening or as a quick lunch. If you like it a little richer, you can sprinkle some extra grated Pecorino on top.

Ingredients (4 ingredients)

  • 300 g Spaghetti
  • 200 g Pecorino Romano
  • 1 tsp Pepper, black
  • 2.5 Liter Water

Prepare water

Add 2.5 liters of water to the mixing bowl and bring to a boil for 10 min./100°C/speed 1. Then add salt.

Cook spaghetti

Add 300 g of spaghetti to the mixing bowl and cook according to the package instructions without temperature/speed 1/reverse. Note the cooking time on the package and it is best to set the timer.

Roast pepper

Gently roast 1 tsp of black pepper in a pan without oil until fragrant. Make sure it doesn't burn. Then deglaze with a cup of pasta water and set aside.

Prepare Pecorino cream

Finely grate 200 g Pecorino Romano and place in a bowl. Add a few tablespoons of hot pasta water and stir into a fine cream. Be careful with the amount of water, it should create a cream.

Finish cooking pasta and prepare sauce

As soon as the pasta has 3 minutes of cooking time left, add a ladle of pasta water to the pan with the roasted pepper. Lift the spaghetti into the pan with tongs. Cook the pasta in the pan for the remaining 3 minutes with minimal liquid. Add the stirred Pecorino and stir constantly to create a creamy sauce. Add more pasta water if necessary until the desired consistency is reached.

Serve

Arrange the spaghetti on plates, sprinkle with additional Pecorino and season with some pepper as desired.
