Description

This dish of spaghetti with green lentils is a revisited classic, perfect for a nourishing and tasty vegetarian meal. I love preparing this recipe, because it is simple, economical and full of flavours. Green lentils, rich in protein, go perfectly with the sweetness of the tomato and the aroma of oregano. It's a comforting dish, ideal for autumn or winter evenings. Feel free to add a little chilli to enhance the taste! You can also use other types of pasta, such as penne or fusilli. A real delight!

Ingredients (9 ingredients)

  • 500 g spaghetti or other pasta
  • 350 g green lentils
  • 1 piece onion
  • 2 c. à s. tomato concentrate
  • to taste Oregano
  • 1 piece large tomato
  • to taste Olive oil
  • to taste Salt or fine salt
  • to taste Pepper

Preparation (7 steps)

Cooking the lentils

Thermomix® Setting
25 min/212°F/Speed 1 100

Pour 350 g of green lentils into the Thermomix bowl. Add water until the lentils are covered. Program 25 Min./100°C/Stufe 1.

Drain the lentils

Once cooked, drain the lentils and set aside.

Preparation of the lentil sauce

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 1 onion cut into quarters in the Thermomix bowl and chop 3 Sek./Stufe 5. Add a little olive oil and sauté 3 Min./120°C/Stufe 1.

Adding the lentils and other ingredients

Thermomix® Setting
5 sec/Speed 3/Linkslauf Reverse

Add the cooked and drained lentils, 2 tbsp of tomato concentrate, oregano, 1 tomato cut into small cubes, salt and pepper to the Thermomix bowl. Mix 5 Sek./Stufe 3/Linkslauf.

Simmering the sauce

Thermomix® Setting
10 min/212°F/Speed 1/Linkslauf 100 Reverse

Simmer the sauce 10 Min./100°C/Stufe 1/Linkslauf. Adjust seasoning if necessary.

Cooking the pasta

Meanwhile, cook 500 g of spaghetti or other pasta in a saucepan of boiling salted water according to the package instructions.

Serve

Serve the spaghetti with the lentil sauce and a little fresh oregano.
