Description

This creole chicken stew is a comforting and flavorful dish, perfect for cold days. The combination of tender chicken with potatoes, onions, tomatoes, and a touch of spices creates a symphony of flavors that will transport you to grandma's kitchen. I have been preparing it for years and it is always a success at home. It is ideal to share with family or friends, and can be accompanied by a good red wine. The preparation is simple and does not require complicated ingredients. Go ahead and try it, you will love it! It is also an excellent option to take advantage of those vegetables you have in the refrigerator. A complete and delicious dish!

Ingredients (10 ingredients)

  • 6 piece pieces of chicken (thigh/drumstick)
  • 3 piece large potatoes
  • 2 piece large onions
  • 3 piece tomatoes in fruit
  • 4 clove garlic
  • 1 cube vegetable flavoring broth
  • salt
  • oil
  • white pepper
  • seasonings (dehydrated for pizza and paprika)

Preparation (7 steps)

Preparation of the chicken

Remove excess fat from chicken (or skin, if preferred). Season with salt and pepper to taste and set aside.

Preparation of the vegetables

Peel 3 large potatoes and cut them into thick slices. Peel 2 large onions and cut them into rings. Cut 3 tomatoes into small pieces. Peel 4 cloves of garlic and chop them finely. Reserve all the vegetables.

Broth preparation

Dissolve 1 cube of vegetable flavoring broth in 500 ml of boiling water. Keep on low heat.

Brown the chicken

In a pan with a little oil, brown 6 pieces of chicken (thigh/drumstick) on all sides until sealed. Remove the chicken from the pan and set aside.

Cook the vegetables

Place the onion rings in the Thermomix bowl and program 3 seconds/speed 5. Add a little oil and sauté for 3 minutes/120°C/speed 1.

Add the rest of the ingredients

30 min/212°F/Speed 1 100 Reverse

Add the sliced potatoes, chopped tomato, chopped garlic, browned chicken, salt, white pepper, seasonings to taste (dehydrated for pizza and paprika) and a little vegetable broth to the Thermomix bowl. Cover and program 30 minutes/100°C/speed 1/reverse rotation.

Finish cooking

20 min/212°F/Speed 1 100 Reverse

Check the cooking, carefully turn the chicken pieces, rectify broth if necessary, cover and cook for 20 more minutes/100°C/speed 1/reverse rotation.
