Description

This spice bread with dried fruits and nuts is prepared in the Thermomix® and is ideal for the Christmas season. The main ingredients are lemon, dried apricots and plums, apples and hazelnuts, refined with Christmas spices. The preparation time is 570 minutes, of which 60 minutes are active working time, the recipe yields 16 servings. The bread is suitable as a hearty breakfast or Christmas dessert and is vegetarian.

Ingredients (13 ingredients)

  • 0.5 piece Lemon
  • 150 g dried Apricots
  • 150 g dried Plums
  • 800 g sour Apples (e.g. Boskoop)
  • 150 g whole Hazelnuts
  • 250 g Brown Sugar
  • 0.5 tsp Cinnamon
  • 1 Msp. Ground cloves
  • 500 g Flour
  • 1 packet Baking powder
  • 125 g Margarine
  • 50 g Margarine
  • 3 piece Eggs (size M)

Preparation (7 steps)

Squeeze lemon juice and prepare fruit

Squeeze the juice of half a lemon. Cut 150 g dried apricots and 150 g dried plums into cubes or pieces. Wash 800 g apples, quarter them, remove the core and dice the rest. Mix the apple cubes with the lemon juice and the diced dried fruits in a bowl. Set the bowl aside.

Chop nuts and mix with fruit

Put 150 g hazelnuts in the mixing bowl and chop coarsely for 3 sec/speed 5. Add the chopped nuts to the prepared fruit in the bowl. Add 250 g brown sugar, 0.5 tsp cinnamon and 1 pinch of ground cloves. Mix everything well and let it steep covered overnight.

Preheat oven and drain fruit

Preheat the oven to 150 °C convection (150 °C top/bottom heat). Drain the pickled fruit in a sieve.

Prepare flour mixture

Put 500 g flour and 1 packet of baking powder in the mixing bowl and mix for 10 sec/speed 4.

Knead dough

Add 125 g margarine in flakes and 3 eggs (size M) to the flour in the mixing bowl and knead everything for 2 min/knead setting to a crumbly dough.

Fold in fruit and nut mixture

Put the drained fruit and nut mixture in the mixing bowl and mix everything for 30 sec/reverse speed 2 until the ingredients are well mixed. Use the spatula to push the ingredients from the edge of the mixing bowl if necessary.

Shape and bake loaves

Form two loaves with floured hands and place them on a baking sheet lined with baking paper. Melt 50 g margarine in a saucepan on the stove. Brush the fruit breads with the melted margarine and bake them in the preheated oven for about 60 minutes.

For me, this spice bread with dried fruits and nuts is more than just a recipe; it is a reminder of my childhood Advent season. My grandma baked it every year, and the scent of cinnamon and cloves filled the whole house. She had the recipe from her mother, and it has been passed down in our family for generations. The Thermomix® makes the preparation much easier nowadays, of course, but the taste has remained the same. The ingredients all play an important role in the taste and texture of the bread. The lemon provides a pleasant acidity that balances the sweetness of the dried fruits. Apricots and plums give the bread a fruity sweetness and a slightly chewy consistency. The apples, preferably sour varieties such as Boskoop, add juiciness and another dimension of flavor. The hazelnuts provide a crunchy bite and a nutty aroma. Brown sugar gives the bread a caramel-like note and a darker color. Cinnamon and ground cloves are the classic Christmas spices that give the bread its typical scent and taste. When preparing in the Thermomix®, it is important not to chop the nuts too finely, otherwise they will be lost in the dough. The fruit and nut mixture should really steep overnight so that the flavors can develop optimally. When folding in the fruit and nut mixture, make sure to use the reverse and do not mix for too long, otherwise the dough can become tough. The spatula helps to push the ingredients from the edge of the mixing bowl and ensure even mixing. For a vegan version, the margarine can be replaced with vegetable margarine. The eggs can be replaced with applesauce or flaxseed eggs (mix 1 tbsp ground flaxseed with 3 tbsp water and let swell for 5 minutes). Instead of cinnamon and ground cloves, other Christmas spices such as cardamom, nutmeg or anise can also be used. The spice bread tastes great with a cup of coffee or tea. It can be eaten plain, but also spread with butter or cream cheese. At Christmas, it goes well with cheese and wine. The spice bread stays fresh for several days in an airtight container. It can also be frozen well. To thaw, simply thaw at room temperature. It can also be prepared well in advance: the fruit and nut mixture can be prepared a few days in advance. However, the dough should only be prepared shortly before baking.
