Diese Fajita Chicken Rice Bowl ist ein absolutes Highlight für alle, die es gerne würzig mögen! Das Gericht ist super einfach zuzubereiten und eignet sich perfekt für ein schnelles Mittagessen oder Abendessen. Die Kombination aus zartem Hähnchen, knackigem Gemüse und aromatischem Reis ist einfach unschlagbar. Die Chipotle-Chili-Paste sorgt für die angenehme Schärfe, während die geröstete Limette dem Ganzen eine frische Note verleiht. Ich mache diese Bowl oft, wenn es schnell gehen muss und ich trotzdem etwas Gesundes und Leckeres essen möchte. Ideal auch zum Mitnehmen ins Büro oder für ein Picknick im Park!

Ingredients (11 ingredients)

  • 2 piece chicken breasts
  • 2 piece peppers
  • 2 piece red onions
  • 200 g baby corn
  • 3 tsp chipotle chilli paste
  • 1 piece lime
  • 2 tsp vegetable oil
  • 400 g can black beans
  • 15 g coriander
  • 400 g cooked brown rice
  • 4 tbsp salsa

Preparation (7 steps)

Prepare the vegetables

Preheat the oven to 220°C. Line a large baking tray with baking parchment. Cut the peppers and red onions into strips. Place the chicken breasts, peppers, red onions, and baby corn on the prepared baking tray.

Add the chipotle paste

Spoon the chipotle chili paste over the chicken and vegetables. Season with salt and pepper, then toss to combine. Place the lime halves on the tray, cut-side down. Drizzle the vegetable oil over the chicken and vegetables.

Roast the chicken and vegetables

Roast in the preheated oven for 20 minutes, or until the chicken is cooked through and the vegetables are tender.

Warm the black beans

Thermomix® Setting

Place the black beans in the mixing bowl and heat for 3 Min./60°C/Stufe 1.

Season the beans

Season the warmed black beans with salt and pepper. Add half of the coriander and the lime zest. Squeeze the juice of the roasted lime over the beans.

Slice the chicken

Remove the chicken from the oven and slice it thinly on the diagonal.

Assemble the bowls

Divide the cooked brown rice between four bowls. Add the sliced chicken, roasted vegetables, and black beans to each bowl. Sprinkle with the remaining coriander and serve with salsa.
