Description

These Balkan-style grilled meat fingers, known as Ćevapčići, are a flavorful and hearty dish perfect for grilling season. I've been making this recipe for years, and it's always a hit at barbecues. The combination of ground pork, beef, and lamb, seasoned with garlic and spices, creates a unique and delicious taste. The touch of cayenne pepper adds a pleasant kick. They are quick to prepare, and the grilling time is relatively short. Serve them with some fresh bread and ajvar for a complete Balkan experience. This recipe is perfect for a summer gathering or a casual weeknight dinner.

Ingredients (10 ingredients)

  • 680 g ground pork
  • 450 g lean ground beef
  • 225 g ground lamb
  • 1 piece egg white
  • 4 clove garlic
  • 2 tsp ground black pepper
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cayenne pepper
  • 0.5 tsp paprika

Garlic preparation

Add 4 cloves of garlic to the mixing bowl and chop for 3 seconds / level 7.

Mixing the meat

Add 680g ground pork, 450g lean ground beef, 225g ground lamb, 1 egg white, 2 tsp ground black pepper, 1 tsp salt, 1 tsp baking soda, 1 tsp cayenne pepper, and ½ tsp paprika to the mixing bowl. Mix for 20 seconds / level 4 / reverse.

Forming the sausages

Remove the meat mixture from the mixing bowl. Using your hands, form the mixture into finger-length sausages about 3/4-inch thick. This step does not require the Thermomix.

Grilling the Ćevapčići

Preheat an outdoor grill for medium heat and lightly oil the grate. Cook sausages on the preheated grill, turning occasionally, until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). This step does not require the Thermomix.
