Description

These lamb empanadas are a delicious and hearty snack, perfect for a family meal or a party with friends. The lamb meat, slow-cooked with onion, paprika and a touch of spices, gives it a unique and comforting flavour. The crispy, golden-baked pastry complements the juicy filling perfectly. I often prepare them in autumn, when the lamb is at its best. A tip! Add a little chopped black olives for an extra touch of flavour. I assure you they will fly off the table!

Ingredients (13 ingredients)

  • 300 g lamb meat
  • 1 pack empanada wrappers for oven
  • 1 rama chives
  • 0.5 piece paprika
  • 0.5 piece onion
  • 3 tbsp tomato sauce
  • 1 tsp red bell pepper
  • 1 tsp cumin
  • 1 pinch nutmeg
  • 1 piece cooked egg
  • black olives
  • 1 tbsp oil
  • salt

Preparation (10 steps)

Chop vegetables

Thermomix® Setting
3 sec/Speed 5

Introduce ½ red bell pepper, ½ onion and 1 chives branch into the bowl. Chop during 3 sec./Stufe 5.

Sauté vegetables

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 1 tbsp of oil to the bowl with the chopped vegetables. Sauté during 5 Min./120°C/Stufe 1.

Add spices and tomato sauce

Thermomix® Setting
10 sec/Speed 3

Add 1 pinch of nutmeg, 1 tsp of cumin, salt to taste and 3 tbsp of tomato sauce to the bowl. Mix during 10 Seg./Stufe 3.

Seal the lamb

Remove the mixture from the bowl and set aside. Chop the lamb meat into small cubes. In a frying pan, heat a little oil over medium heat and sear the lamb cubes until golden brown on all sides. This step is not performed in the Thermomix to ensure proper sealing of the meat.

Cook the lamb

Thermomix® Setting
20 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the sealed meat to the bowl with the mixture of vegetables and spices. Cook during 20 Min./100°C/Stufe 1/Linkslauf. Check that the lamb is tender.

Prepare the cooked egg

While the lamb is cooking, boil an egg in a pot with water. Once cooked, peel and chop into small cubes. Set aside.

Chop the olives

Chop the black olives into slices or small cubes. Set aside.

Mix the filling

Once the lamb is cooked and has cooled a little, add the chopped cooked egg and chopped olives to the bowl. Mix gently with a spatula.

Fill the empanadas

Preheat the oven to 250°C. Separate the empanada wrappers and place a portion of filling in the center of each. Fold the dough into a crescent shape and seal the edges with a fork.

Bake the empanadas

Place the empanadas on a baking sheet and bake for 10-15 minutes, or until golden brown on both sides.
