Description
This juicy blueberry cake is a delicious dessert that is easy to prepare with the Thermomix®. The cake consists of a fluffy dough, a creamy vanilla pudding filling and fresh blueberries. With a preparation time of approx. 80 minutes and a working time of 25 minutes, it is ideal for coffee visits or birthdays. The recipe is easy to prepare and is suitable for baking beginners.

120 g Sugar

1 Prise Salt

1 TL Grated lemon zest

220 g Flour

1 TL Baking powder

120 g Milk

270 g Blueberries
Preparation (9 steps)
Prepare vanilla pudding
Prepare vanilla pudding according to package instructions. Cover with foil and let cool for about 35 minutes. No Thermomix setting.
Preheat oven
Preheat oven to 180°C top/bottom heat. No Thermomix setting.
Prepare oven dish
Grease a round oven dish (oven witch) with coconut oil. No Thermomix setting.
Cream butter, sugar and salt
Put 120g butter, 120g sugar and 1 pinch of salt into the mixing bowl and mix for 2 min./speed 3.
Stir in eggs and lemon zest
Add 2 eggs and 1 tsp grated lemon zest and stir in for 30 sec./speed 3.
Add flour, baking powder and milk
Add 220g flour, 1 tsp baking powder and 120g milk and mix for 1 min./speed 4.
Spread dough and add pudding
Put half of the dough into the prepared oven dish. Spread the cooled vanilla pudding on top and spread the remaining dough over it. No Thermomix setting.
Spread blueberries and bake
Generously spread 270g blueberries on top. Bake in the preheated oven at 180°C top/bottom heat for about 45 minutes. No Thermomix setting.
Sprinkle with powdered sugar
After baking, sprinkle the cake with powdered sugar while it is still warm. No Thermomix setting.
