Description

These carrot apple muffins are a poem! I especially like to bake them in autumn when apples and carrots are in season. The brown sugar and cinnamon give them a wonderfully caramel flavor. The muffins are super juicy and stay fresh for a few days - if they haven't been eaten before! If you like, you can add some raisins or other dried fruits to the dough. A delicious icing and chopped walnuts make them a little treat for the palate. Perfect for Sunday brunch or as a sweet surprise for friends and family.

Ingredients (12 ingredients)

  • 1 piece Carrot
  • 1 piece Ginger
  • 150 g Apples
  • 125 g brown Sugar
  • 175 g Butter
  • 4 piece Eggs
  • 375 g Wheat flour Type 405
  • 2 tsp Baking powder
  • 1.5 tsp Cinnamon
  • 0.5 tsp Salt
  • 50 g Walnuts
  • 200 g Icing sugar

Preparation (9 steps)

Chop carrot and ginger

Thermomix® Setting
5 sec/Speed 5

Peel carrot and ginger, cut into coarse pieces and place in the mixing bowl. Chop for 5 sec./speed 5. Scrape down with the spatula.

Chop apple

Thermomix® Setting
5 sec/Speed 4

Peel, quarter and core the apple and add to the carrots and ginger in the mixing bowl. Chop for 5 sec./speed 4. Scrape down with the spatula.

Mix sugar, butter and eggs

Thermomix® Setting
30 sec/Speed 4

Add sugar, butter and eggs to the mixing bowl and mix for 30 sec./speed 4.

Add flour mixture

Thermomix® Setting
20 sec/Speed 3

Add flour, baking powder, cinnamon and salt to the mixing bowl and mix for 20 sec./speed 3.

Fold in vegetable mixture

Thermomix® Setting
15 sec/Speed 2 Reverse

Add the chopped carrot, ginger and apple mixture and fold in for 15 sec./speed 2 reverse.

Bake muffins

Pour the batter into a greased muffin tin and bake in a preheated oven at 180 °C (convection: 155 °C) for approx. 35 minutes. Let cool.

Chop walnuts

Thermomix® Setting
3 sec/Speed 5

Place walnuts in the mixing bowl and chop for 3 sec./speed 5. Transfer.

Prepare icing

Thermomix® Setting
15 sec/Speed 3

Add icing sugar and 4 tbsp water to the mixing bowl and mix for 15 sec./speed 3.

Decorate muffins

Spread the icing on the cooled muffins and decorate with the chopped walnuts.
