Description

This hearty casserole is a true all-rounder when it comes to using up leftover vegetables and cooked potatoes or pasta. I especially like to make it when there's something left over from the day before. The preparation is very simple and quick, making it perfect for an uncomplicated lunch or dinner. The addition of eggs and milk makes the casserole nice and juicy and gives it a great consistency. If you like, you can bake it with some cheese. An ideal dish for the whole family!

Ingredients (9 ingredients)

  • 350 g Potatoes (cooked)
  • 500 g Vegetables (various, mixed)
  • 1 piece Onion(s)
  • 200 g Ham and sausage scraps (Salami, Landjäger,...)
  • 3 piece Egg(s)
  • Milk or sour cream
  • Salt
  • Pepper
  • Herbs possibly

Preparation (6 steps)

Chop onion

Place 1 onion in the mixing bowl and chop for 3 sec./speed 5. If necessary, slide down with the spatula.

Sauté onion

Leave the chopped onion in the mixing bowl and sauté for 3 min./120°C/speed 1 without adding anything else.

Whisk eggs

20 sec/Speed 3

Add 3 eggs, some milk or sour cream, salt, pepper and herbs (to taste) to the mixing bowl and mix for 20 sec./speed 3.

Layer casserole

Prepare a casserole dish. Layer 350 g cooked potatoes or pasta, 500 g mixed vegetables and 200 g ham and sausage scraps (Salami, Landjäger,...) in layers in the casserole dish. First the potatoes/pasta, then the onion, then the ham/sausage, then the vegetables.

Pour egg-milk mixture over

Pour the whisked egg-milk mixture over the ingredients in the casserole dish. Sprinkle cheese on top as desired.

Bake casserole

Bake the casserole in a preheated oven at 200°C until the egg-milk mixture is firm (approx. 30 minutes).
