Description

This beef sauce is a classic of Italian cuisine, perfect for dressing any type of pasta. I prepare it often, especially when I have time to simmer it slowly, just as tradition dictates. The secret lies in the slow cooking, which allows the flavors to blend perfectly. Excellent for Sunday lunch with the family or for a dinner with friends. It can be prepared in advance and stored in the refrigerator or frozen. A true comfort food, rich and flavorful, that warms the heart and delights the palate. Ideal for a substantial and satisfying meal.

  • Carrots
  • Celery
  • Onions
  • Tomato purée
  • Tomato paste
  • White wine
  • Extra virgin olive oil (EVO)
  • Salt
  • Black pepper

Preparation (5 steps)

Chopped vegetables

Insert the carrot in pieces, the celery and the onions into the bowl. Chop for 5 Sec./Stufe 5.

Vegetable sauté

Add the extra virgin olive oil and sauté for 20 Min./120°C/Stufe 1.

Brown the meat

In a large pan, brown the lean ground beef and the fatty ground beef for at least 20 minutes, stirring often.

Deglaze with wine

Thermomix® Setting
5 min/212°F/Speed 1 100

Add the browned meat to the bowl, pour in the dry white wine and cook for 5 Min./100°C/Stufe 1 without the measuring cup, to evaporate the alcohol.

Adding tomato and slow cooking

Thermomix® Setting
120 min/203°F/Speed 1 95 Reverse

Add the tomato paste diluted in water and the tomato purée. Adjust salt and pepper. Cook for 120 Min./95°C/Stufe 1/Linkslauf.
