Description

This hearty kohlrabi casserole with ground beef is a real comfort food for the whole family. I especially like to make it when the kohlrabi is fresh from the garden. The combination of the slightly sweet kohlrabi, the spicy ground beef and the creamy cream cheese sauce is simply unbeatable. The cheese gives the casserole a nice crust. It is quick to prepare and tastes good both warm and lukewarm. Ideal for a quick lunch or a relaxed dinner. If you like, you can sprinkle some fresh parsley over it.

Ingredients (11 ingredients)

  • 600 g Kohlrabi
  • 2 clove Garlic
  • 1 tbsp Olive oil
  • 500 g Beef ground beef
  • 2 tbsp Tomato paste
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg
  • 200 g Cream cheese with herbs
  • 200 g Cream
  • 100 g Grated cheese

Preparation (7 steps)

Chop kohlrabi

Thermomix® Setting
5 min/212°F/Speed 1 100

Peel 600g kohlrabi, cut into approx. 2 cm cubes and put into the mixing bowl. Add 500 ml water and cook for 5 Min./100°C/level 1.

Pour off kohlrabi

Pour the cooked kohlrabi through the simmering basket and set aside. Empty and clean the mixing bowl.

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Put 2 cloves of garlic in the mixing bowl and chop for 3 sec./level 7. Push down with the spatula.

Prepare ground beef

Heat 1 tbsp olive oil in a pan and brown 500g beef ground beef in it. Add the chopped garlic and fry briefly. Season with salt, pepper and nutmeg and stir in 2 tbsp tomato paste.

Layer casserole

Preheat the oven to 200 degrees top/bottom heat. Put the fried ground beef and the pre-cooked kohlrabi in a casserole dish and mix.

Prepare sauce

Put 200g cream cheese with herbs and 200g cream in the mixing bowl, season with salt and pepper and stir for 10 sec./level 3.

Finish casserole and bake

Pour the cream cheese sauce over the kohlrabi and ground beef. Sprinkle everything with 100g grated cheese (e.g. Gouda or Emmentaler) and bake in the preheated oven for approx. 25 minutes until the cheese is golden brown.

About this recipe

This kohlrabi casserole with ground beef is a dish that reminds me of my childhood. My grandma had a huge vegetable garden, and kohlrabi was always plentiful. She often just cooked it and served it with butter, but sometimes, when it was supposed to be something special, there was this casserole. I have adapted her recipe a bit over the years, especially by using the Thermomix®, which makes the preparation much easier. The kohlrabi is of course the main ingredient. It brings a slightly sweet, almost nutty note to the casserole and provides a pleasant texture. It is important that it is not cooked too soft, it should still have some bite. The ground beef provides the savory component and provides the necessary seasoning. I prefer to use beef ground beef, as it has a stronger taste, but you can also use mixed ground beef. The garlic, tomato paste and spices give the ground beef an additional flavor dimension. The cream cheese with herbs and the cream form the creamy base of the sauce. I recommend using a cream cheese with fresh herbs such as chives, parsley or dill to give the casserole a fresh note. The grated cheese provides the golden brown crust that makes the casserole so irresistible. When preparing in the Thermomix®, it is important not to cook the kohlrabi for too long, otherwise it will become too soft. The 5 minutes at 100°C are ideal to prepare it without it falling apart. Chopping the garlic in the Thermomix® is of course super practical, as you save yourself the hassle of chopping with a knife. When browning the ground beef, make sure it is cooked through before adding it to the casserole dish. The sauce in the Thermomix® is quick to prepare, but you can of course also stir it by hand. For a vegetarian version, you can replace the ground beef with lentils or soy granules. If you like it vegan, you can use vegan cream cheese and cream and omit the cheese or replace it with a vegan cheese alternative. Instead of nutmeg, you can also use other spices such as paprika or caraway. Serve the casserole warm or lukewarm. A fresh salad or a piece of bread goes well with it. If you like, you can sprinkle the casserole with fresh parsley. The casserole can be prepared well. You can layer it the day before and store it in the refrigerator. Before baking, it should then reach room temperature a little. Leftovers can be stored in the refrigerator and reheated the next day.
