Description

This hearty potato meatloaf pan is a savory dish that tastes especially good on colder days. I like to make it when I have potatoes left over from the day before. The combination of crispy fried potatoes, spicy meatloaf and bacon is simply unbeatable. The fresh chives provide a pleasant freshness. The preparation is a bit time-consuming, but the result is well worth it. Perfect as a filling lunch or dinner for the whole family. If you like, you can also serve a fried egg with it.

Ingredients (8 ingredients)

  • 2 kg waxy potatoes
  • 4 piece medium-sized onions
  • 500 g meatloaf
  • 100 g smoked, streaky bacon
  • 1 bunch Chives
  • 50 g Clarified butter
  • to taste Salt
  • to taste Pepper

Preparation (9 steps)

Prepare potatoes

Wash 2 kg waxy potatoes and cook covered in a pot for about 20 minutes. Then quench, peel and let cool. Cut the cooled potatoes into slices.

Prepare onions

Thermomix® Setting

Peel 4 medium-sized onions, halve and place in the mixing bowl. Chop for 3 sec./speed 5. Then transfer.

Prepare bacon

Cut 100 g smoked, streaky bacon into fine cubes.

Prepare chives

Wash, shake dry and finely chop 1 bunch of chives.

Fry bacon and onions

Heat 1 tbsp clarified butter in a large pan. Fry the bacon in it until crispy. Briefly sauté the onions and remove everything from the pan and set aside.

Fry meatloaf

Coarsely dice 500 g meatloaf and fry in the bacon fat in the pan. Then remove and set aside.

Fry potatoes

Heat the remaining clarified butter (4-5 tbsp) in the pan. Fry the potato slices in 2-3 portions for about 10 minutes each, turning occasionally and seasoning with salt and pepper.

Keep warm in the oven

Mix the fried potatoes on a baking sheet with meatloaf, bacon and onions and keep warm in a preheated oven at approx. 100 °C.

Arrange and serve

To serve, arrange the dish in the pan again if necessary and sprinkle with the finely chopped chives. Serve immediately.
