Description

These sweet and sour eggplants are a true explosion of Mediterranean flavors! The eggplants, cut into strips and cooked with garlic, chili pepper and a touch of sweetness, are perfect as an appetizer or side dish. I often prepare them during the summer, when eggplants are at their best. Fresh basil adds an unmistakable scent. They are prepared in about an hour, but the result is truly delicious. Also excellent cold, they are ideal for a buffet or a picnic. A simple and tasty vegetarian dish that will win everyone over!

Ingredients (8 ingredients)

  • 800 g eggplants
  • 3 tbsp sugar
  • 100 ml white wine vinegar
  • 1 clove garlic
  • olive oil
  • chili pepper
  • fine salt
  • basil

Preparation of the eggplants

Wash 800 g of eggplants, trim them to remove the stalk and cut them into slices lengthwise with a thickness of maximum 1 centimeter. Obtain strips of the same thickness from the slices. Set aside.

Sauté garlic and chili pepper

Pour olive oil as needed into the bowl. Add 1 clove of garlic, sliced, and chili pepper as needed. Sauté for 3 Min./120°C/Stufe 1.

Cook the eggplants

15 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the eggplant strips to the bowl and cook with the lid on for 15 Min./100°C/Stufe 1/Linkslauf. Gently mix with the spatula halfway through cooking.

Season and boil

5 min/212°F/Speed 1/Linkslauf 100 Reverse

Season the eggplants with fine salt as needed. Add 100 ml of white wine vinegar and bring to a boil for 5 Min./100°C/Stufe 1/Linkslauf.

Add the sugar

Thermomix® Setting
5 min/212°F/Speed 1/Linkslauf 100 Reverse

Pour 3 tablespoons of sugar into the bowl and mix for 5 Min./100°C/Stufe 1/Linkslauf. Continue cooking with the lid on until the liquid has reduced.

Flavor with basil

Add basil as needed, finely chopped, to the bowl and mix for 1 Min./Stufe 1/Linkslauf.

Cool and serve

Turn off the heat and let the eggplants cool. Transfer to a serving dish and garnish with a few fresh basil leaves. Serve at room temperature or cold.
