Description

Do you have leftover pandoro from the holidays? Don't throw it away! With this very simple recipe you can transform it into delicious sweet sandwiches, perfect for a delicious dessert or a tasty snack. The mascarpone and cream, enriched with a touch of powdered sugar, goes perfectly with the softness of the pandoro. You can fill the sandwiches with pistachio spread, hazelnut spread or your favorite jam. I love them with strawberry jam! Preparing them is child's play and the result is always a success. Ideal for ending a lunch or dinner in style, or for an afternoon treat.

Ingredients (7 ingredients)

  • 1 piece Pandoro
  • 250 g Mascarpone
  • 150 ml Fresh whipping cream
  • 50 g Powdered sugar
  • to taste Pistachio spread
  • to taste Chocolate hazelnut spread
  • to taste Strawberry jam

Preparation of mascarpone and cream

Thermomix® Setting
2 min/Speed 3.5

In the Thermomix bowl, insert 250g of mascarpone, 50g of powdered sugar and 150ml of fresh whipping cream. Whip everything with the butterfly inserted for 2 Min./Stufe 3.5 until a compact and homogeneous cream is obtained. Transfer the cream to a bowl and let it rest in the refrigerator for about 10 minutes.

Cutting the pandoro

Take a pandoro and place it on its side, on the work surface. Cut it into slices about 2 cm thick with a sharp knife.

Filling the slices

Spread the pandoro slices with pistachio spread, chocolate hazelnut spread or strawberry jam. Make sure the slices are even, because they will then have to be joined together.

Addition of mascarpone cream

Take the mascarpone cream from the fridge and transfer it to a pastry bag with a star tip. Add the cream on the layer of creams previously spread on the pandoro slices.

Composition of the sandwiches

Join the slices two by two and, using the points of the "stars" as a guide, cut the sandwiches. Arrange the filled sandwiches on a tray and serve.
