  • 400 g Sweet potatoes, peeled
  • 2 TL Fried Potato Spice
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 80 g Corn semolina
  • 70 g Cornstarch
  • 1 Stück Egg (room temperature)

Prepare sweet potatoes

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

The day before, peel 200 g of sweet potatoes and cut into pieces. Place the sweet potato pieces in the simmering basket. Add 500 ml of water to the mixing bowl, insert the simmering basket and cook for 20 min/Varoma/speed 1. Refrigerate the cooked sweet potatoes overnight.

Press cooked sweet potatoes

Press the cooked sweet potatoes through a potato ricer and place in a bowl.

Grate raw sweet potatoes

Peel the remaining 200 g of sweet potatoes and grate finely with a kitchen grater. Squeeze the grated sweet potatoes well to remove excess liquid and add to the pressed mixture in the bowl.

Season sweet potato mixture

Mix the pressed and grated sweet potato mixture with 2 tsp Fried Potato Spice, salt and pepper in the bowl.

Prepare dumpling dough

Add 80 g corn semolina, 70 g cornstarch and 1 egg (room temperature) to the sweet potato mixture in the bowl and mix everything well until a malleable dough forms.

Shape dumplings

Form 4-6 dumplings from the mixture with floured hands.

Cook dumplings

20 min/203°F/Gentle stir speed 95

Add 500 ml of water to the mixing bowl and bring to a boil for 10 min/100°C/speed 1. Carefully add the formed dumplings to the boiling water and cook for 20 min/95°C/gentle stir setting until they float to the surface.
