Description

This almond brittle ice cream is an absolute delight! I especially like to make it in the summer when you're longing for a cool refreshment. The homemade brittle provides a wonderful crunch and harmonizes perfectly with the creamy ice cream. The preparation is a bit more complex, but the result is well worth it. A tip: It's best to prepare the brittle the day before, then you'll have less stress. The ice cream is perfect for birthdays or just to treat yourself. It just tastes delicious!

Ingredients (9 ingredients)

  • 30 g Butter
  • 50 g Honey
  • 100 g Blanched almonds
  • 2 piece Egg yolks
  • 25 g Icing sugar
  • 150 ml Milk
  • 25 g Sugar
  • 200 ml Sweet cream
  • 2 Tropfen Bitter almond flavor

Preparation (10 steps)

Melt butter and honey

Thermomix® Setting

Add 30 g butter and 50 g honey to the mixing bowl and melt for 3 min./50°C/speed 2.

Grind and caramelize almonds

Thermomix® Setting

Add 100 g almonds (blanched) to the mixing bowl and chop for 5 sec./speed 5. Then add the chopped almonds to the butter-honey mixture and caramelize for 5 min./120°C/speed 1 while stirring. Use a spatula to push the mixture away from the edge.

Cool the brittle

Pour the brittle from the mixing bowl into a shallow container and let it cool. Stir occasionally so that the brittle does not stick together. If necessary, chop it up a little with a cooking spoon.

Beat egg yolks and icing sugar

Add 2 egg yolks and 25 g icing sugar to the mixing bowl. Insert the butterfly and beat until frothy for 2 min./speed 3.

Prepare milk-cream mixture

Thermomix® Setting

Add 150 ml milk, 25 g sugar and 100 ml sweet cream to the mixing bowl and heat for 8 min./90°C/speed 2. Use the measuring cup.

Mix egg yolk mixture and milk-cream mixture

Slowly pour the hot milk-cream mixture into the egg yolk mixture in the mixing bowl and stir for 20 sec./speed 3. Transfer the mixture and chill, covered, in the refrigerator for about 1 hour or in the freezer for 15 minutes.

Refine ice cream mixture

Put the pre-cooled ice cream mixture back into the mixing bowl. Add 2 drops of bitter almond flavor and 100 ml of sweet cream and stir for 30 sec./speed 3.

Freeze ice cream

Pour the ice cream mixture into a suitable container and place in the freezer for about 15 minutes.

Fold in brittle

Mix 2/3 of the prepared brittle into the half-frozen ice cream and let it freeze for another 15 minutes.

Serve ice cream

Before serving, let the ice cream freeze for a few minutes in the ice cream container without the stirring mechanism switched on. Garnish with the remaining brittle.
