Description

This dish is a revisited beef salad, perfect for hot summer days or for a festive starter. The combination of tender beef, candied peppers and the sweetness of dried apricots is a delight for the taste buds. I have been preparing this recipe for years and it always makes a splash with my guests. The candied peppers bring a sweet and slightly smoky flavor, while the apricot puree adds a sweet and tangy touch. A little Espelette pepper enhances everything with a subtle spicy note. This salad can be prepared in advance, which is very practical for receptions.

Ingredients (11 ingredients)

  • 300 g Beef
  • 4 piece Pepper(s)
  • 1 clove Crushed garlic
  • 100 g Dried apricots
  • 1 cube Vegetable stock cube
  • 1 pinch Espelette pepper
  • Salt pepper
  • Lime(s)
  • 2 tbsp Olive oil
  • 1 branche Thyme
  • Salt pepper

Preparation (8 steps)

Preparation of the marinade

In a bowl, mix the juice of one lime, 2 tablespoons of olive oil, a sprig of thyme, salt and pepper. Mix well and set aside.

Beef marinade

Brush the beef steaks (300g) with the prepared marinade. Marinate in the refrigerator for 1 hour.

Preparation of candied peppers

Preheat the oven to 180°C. Place the whole peppers (4) on a baking sheet lined with parchment paper. Bake for 1 hour, turning every 15 minutes to brown on all sides. Let cool, peel and cut into strips.

Preparation of flavored oil

Thermomix® Setting

Put a crushed clove of garlic in the bowl and chop 3 Sec./Stufe 7. Add the rest of the marinade oil and a pinch of Espelette pepper. Mix 10 Sec./Stufe 3.

Pepper seasoning

Salt and pepper the pepper strips. Pour the prepared flavored oil over the peppers and mix gently.

Preparation of apricot puree

Thermomix® Setting
30 sec/Speed 8

In the bowl, pour a glass of boiling water and add a vegetable stock cube. Add the dried apricots (100g) and let swell for 10 minutes. Then blend 30 Sek./Stufe 8.

Cooking the beef

Fry the beef steaks for 3 minutes on each side, over high heat, in a pan. Let rest for 2 minutes under a sheet of aluminum foil and cut into thin slices.

Plating

Serve the sliced beef, topped with apricot coulis, on a bed of candied peppers.
