Description

This curd cake is a real classic and tastes good to everyone! I've been baking it since I was a child and it's always a highlight on the coffee table. The dough is quick to prepare and the curd filling is wonderfully creamy. The almond slivers give the cake that certain something. It is perfect for birthdays, brunch or just for enjoying. The preparation is straightforward and can be done with the Thermomix® in no time at all. An absolute must for all cake lovers!

Ingredients (10 ingredients)

  • 200 g Margarine or Butter
  • 100 g Sugar
  • 1 piece Egg
  • 200 g Flour
  • 1 tsp Baking powder
  • 3 container Cream curd
  • 8 piece Egg
  • 150 g Sugar
  • 1 Pck. Pudding powder vanilla-
  • 1 Handvoll Almonds slivers

Preparation (8 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 200 g margarine or butter, 100 g sugar, 1 egg, 200 g flour and 1 tsp baking powder into the mixing bowl and process into a dough for 2 min./kneading stage.

Place dough in springform pan

Place the dough in a greased springform pan (approx. 26 cm diameter) and pull up an edge.

Prepare curd mixture

Thermomix® Setting
30 sec/Speed 4

Put 3 cups cream curd, 8 egg yolks, 150 g sugar and 1 packet vanilla pudding powder into the mixing bowl and mix for 30 sec./level 4.

Whisk egg whites until stiff

Thermomix® Setting
3 min/Speed 3.5

Put 8 egg whites in the mixing bowl and whisk with the butterfly for 3 min./level 3.5 until stiff.

Fold in egg white

Carefully fold the stiffly beaten egg white into the curd mixture with a spatula.

Pour curd mixture onto dough

Pour the curd mixture onto the dough in the springform pan and smooth it out.

Spread almond slivers

Spread a handful of almond slivers on the topping.

Baking

Bake the cake in a preheated oven at 175°C top/bottom heat for 60-70 minutes.
