Description

This summer vegetable terrine is a sunny and tasty dish, perfect for a light lunch or a friendly dinner. Inspired by ratatouille, it is enriched with eggs for a fluffy texture and an elegant presentation. Fresh vegetables such as eggplants, zucchini, peppers and tomatoes are highlighted, flavored with herbs from Provence. Easy to prepare with the Thermomix®, this terrine can be served hot or cold, accompanied by a fresh tomato coulis. A real treat for the taste buds and a concentrate of summer flavors!

Ingredients (12 ingredients)

  • 25 cl tomato coulis
  • basil
  • to taste thyme
  • to taste olive oil
  • to taste fine salt
  • to taste pepper
  • 6 piece eggs
  • 300 g tomatoes
  • 1 piece pepper
  • 2 piece eggplants
  • 2 piece zucchini
  • 1 bunch onion

Vegetable preparation

Cut the pepper into strips, the onion into thin slices, the eggplants, zucchini and tomatoes into dice. Put the pepper and onion in the Thermomix bowl. Add 30 ml of olive oil and sauté for 5 minutes/120°C/Speed 1.

Ratatouille cooking

Thermomix® Setting
30 min/212°F/Speed 1 100 Reverse

Add the eggplants, zucchini and tomatoes to the Thermomix bowl. Salt, pepper and sprinkle with thyme. Program 30 minutes/100°C/Speed 1/Reverse rotation. Mix gently with the spatula halfway through cooking.

Omelet preparation

In a salad bowl, beat the 6 eggs into an omelet. Add the chopped basil, salt and pepper. Mix.

Incorporating the eggs into the ratatouille

Pour the beaten eggs into the Thermomix bowl containing the ratatouille. Mix gently with the spatula.

Oven baking

Pour the preparation into an oiled cake pan. Bake in a preheated oven at 180°C for 45 minutes.

Tomato coulis preparation

While the terrine is cooking, pour the 25 cl of tomato coulis into the Thermomix bowl. Add a few dices of green pepper. Heat for 5 minutes/80°C/Speed 1.
