Description

This rustic meat terrine is a comforting and tasty dish, perfect for a Sunday brunch or a festive meal. I often prepare it in the autumn, when the days get shorter and you want hot and convivial dishes. The combination of minced beef, sausage meat and bacon, all enhanced by a touch of coffee and grated cheese, makes it an irresistible dish. Preparation is quick and easy with the Thermomix®, and the result is always a success. Feel free to add a homemade tomato sauce for even more indulgence! It's a hearty dish that will please the whole family.

Ingredients (9 ingredients)

  • 3 c. à café Coffee
  • 1 pinch Pepper
  • 1 piece Egg(s)
  • 75 g Grated cheese
  • 450 g Minced beef
  • 100 g Bacon cubes
  • 150 g Sausage meat(s)
  • 0.25 dl Milk
  • 6 dl Tomato sauce

Preparation (8 steps)

Preparation of the spice mixture

Thermomix® Setting
5 sec/Speed 1

In the Thermomix bowl, add 3 tsp of coffee and 1 pinch of pepper. Mix 5 Sec./Level 1.

Mixing eggs and spices

Pour the spice mixture into a large bowl. Add 1 egg and mix with a fork until a uniform color is obtained.

Chopping the bacon cubes

Thermomix® Setting
5 sec/Speed 5

Put 100 g of bacon cubes in the Thermomix bowl and chop 5 Sec./Level 5.

Incorporating cheese and milk

Thermomix® Setting
10 sec/Speed 3

Add 40 g of grated cheese and 0.25 dl of milk to the egg and spice mixture. Mix 10 Sec./Level 3.

Mixing the meat and bacon cubes

Thermomix® Setting
20 sec/Speed 4/Linkslauf Reverse

Add 450 g of minced beef and the chopped bacon cubes to the previous mixture. Mix 20 Sec./Level 4/Reverse direction.

Incorporating the sausage meat

Thermomix® Setting
20 sec/Speed 4/Linkslauf Reverse

Add 150 g of sausage meat to the mixture. Mix 20 Sec./Level 4/Reverse direction.

Shaping and baking

Preheat the oven to th.7 (200°C) and butter a rectangular ovenproof dish. Place the meat mixture in the dish and shape it to the shape of the dish. Arrange the remaining grated cheese (35 g) on the meat. Bake for 60 Min./200°C.

Service

After 1 hour of cooking, remove the dish from the oven. As desired, add tomato sauce to the bottom of the dish or not. Serve hot.
