Description

This recipe for butter-soft, braised pork ribs in apple cider is a hearty main course, ideal for the autumn season. The ribs are first seared in a pan and then braised in the Thermomix® with vegetables, apple cider, and spices. The preparation time is about 2.5 hours and yields 4 servings. Ingredients (14 ingredients)

  • 1200 g Pork ribs
  • 250 g Onions
  • 2 Stück Garlic cloves
  • 100 g Celery
  • 40 g Oil
  • 1 EL Tomato paste
  • 1 TL Mustard
  • 1 TL Sweet paprika powder
  • 0.5 TL Pepper
  • 1 TL Salt
  • 1 Prise Sugar
  • 250 ml Apple cider
  • 250 ml Vegetable broth
  • 2 EL Cornstarch

Preparation (6 steps)

Chop onions, garlic, and celery

Place 250g onions in the mixing bowl and chop for 3 sec./speed 5. Add 2 garlic cloves and 100g celery and chop for another 3 sec./speed 5.

Sauté vegetables

Add 40g oil to the chopped vegetables in the mixing bowl and sauté for 3 min./120°C/speed 1.

Sear meat

Sear the 1.2 kg pork ribs in a separate pan on all sides and then add them to the mixing bowl.

Add other ingredients and simmer

Add 1 tbsp tomato paste, 1 tsp mustard, 1 tsp sweet paprika powder, 1/2 tsp pepper, 1 tsp salt, 1 pinch of sugar, 250 ml apple cider, and 250 ml vegetable broth to the pork ribs in the mixing bowl and simmer for 90 min./100°C/Reverse speed 1. Leave the measuring cup on.

Thicken sauce

After the cooking time is over, remove the pork ribs from the mixing bowl and keep warm. Mix 2 tbsp cornstarch with some water and add to the mixing bowl. Cook for 5 min./100°C/speed 2 to thicken the sauce. Leave the measuring cup on.

Pour the sauce over the pork ribs and serve.
