Description

This casserole chicken with vegetables is a comforting and flavorful dish, perfect for a family meal or a special dinner. The combination of tender chicken with sautéed vegetables and a homemade tomato sauce makes it an irresistible dish. I often prepare it in autumn and winter, when you feel like something warm and nutritious. The recipe is very easy to adapt to the Thermomix®, which makes preparation even easier. Go ahead and try it, you will love it! You can accompany it with mashed potatoes or white rice for a complete meal.

Ingredients (11 ingredients)

  • 1 piece chicken supreme
  • 1 cup canned pear tomato
  • 1 piece onion
  • 0.5 piece bell pepper
  • 1 piece carrot
  • 0.5 cup frozen peas
  • 1 tsp sweet paprika
  • 0.25 tsp pepper
  • 2 tbsp flour or cornstarch
  • 1 tsp oil
  • 0.25 tsp sodium bicarbonate

Preparation (9 steps)

Prepare the vegetables

Peel the onion and carrot. Cut the onion and bell pepper into julienne strips, and the carrot into thin slices. Set aside.

Sauté the onion

Add the onion to the Thermomix® bowl together with 1 teaspoon of oil. Program 3 Min./120°C/Stufe 1.

Add the pepper and carrot

Thermomix® Setting

Add the bell pepper and carrot to the bowl. Program 5 Min./120°C/Stufe 1.

Prepare the chicken

Cut the chicken supreme into 3 portions. Pass each portion through flour or cornstarch, making sure they are well covered.

Brown the chicken

In a separate pan, brown the chicken on both sides over medium-high heat. Set aside.

Add the remaining ingredients

Add the sautéed vegetables to the Thermomix® bowl. Add the sweet paprika, pepper, frozen peas, canned pear tomato, and tomato sauce. Mix well with the spatula.

Cook the chicken in the sauce

Thermomix® Setting
20 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Place the browned chicken in the Thermomix® bowl on top of the vegetables and sauce. Program 20 Min./100°C/Giro a la izquierda/Velocidad cuchara.

Adjust the acidity (optional)

If the sauce is very acidic, add a quarter of a teaspoon of sodium bicarbonate and mix with the spatula.

Serve

Serve the hot casserole chicken, accompanied by mashed potatoes, rice or your preferred side dish.
