Description

This chocolate cake with cherries is a true delight for all chocolate lovers! The combination of moist chocolate dough and fruity cherries makes it a special highlight on any coffee table. I especially like to bake this cake in the winter, when the longing for something sweet and warming is great. The preparation with the Thermomix® is very easy and saves time. The cake can also be prepared well in advance and stays fresh for a few days. An absolute must for birthdays or just because!

Ingredients (11 ingredients)

  • 370 g Sour cherries (drained weight)
  • 150 g Bittersweet chocolate
  • 250 g Butter (soft)
  • 180 g Cane sugar
  • 4 piece Eggs
  • 200 g Wheat flour Type 405
  • 100 g Ground hazelnuts
  • 1 Pck. Baking powder
  • 50 g Baking cocoa
  • 1 Prise(n) Salt
  • 200 ml Milk

Preparation (8 steps)

Chop chocolate

Thermomix® Setting
8 sec/Speed 7

Break 150 g bittersweet chocolate into pieces and place in the mixing bowl. Chop for 8 sec/speed 7. Transfer and set aside.

Beat butter and sugar until fluffy

Thermomix® Setting
3 min/Speed 4

Put 250 g soft butter and 180 g cane sugar in the mixing bowl. Beat until fluffy for 3 min/speed 4.

Add eggs

Thermomix® Setting
15 sec/Speed 3

Add 4 eggs one after the other through the lid opening and mix for 15 sec/speed 3 each time.

Mix dry ingredients

20 sec/Speed 4

Put 200 g wheat flour Type 405, 100 g ground hazelnuts, 1 pack baking powder, 50 g baking cocoa and 1 pinch of salt in the mixing bowl. Mix for 20 sec/speed 4.

Add liquid ingredients and cherry juice

30 sec/Speed 3

Add 200 ml milk and 50 ml cherry juice. Stir for 30 sec/speed 3.

Fold in chopped chocolate

15 sec/Linkslauf Speed 2 Reverse

Add the chopped chocolate from step 1 and fold in for 15 sec/reverse rotation speed 2.

Pour dough into mold and distribute cherries

Grease a springform pan (approx. 24 cm) or line with baking paper. Pour the dough into the springform pan. Drain 370g sour cherries (drained weight) and spread evenly on the dough, press down lightly.

Bake

Bake the cake in a preheated oven at 180 °C top/bottom heat for approx. 50-60 minutes (stick test!).
